This is the army I'm currently going with at 2000 points, any advice is welcome.
Inquisitor - terminator armour, psycannon (80)

Dreadknight - heavy incinerator, personal teleporter (235)

I think the interceptors are too expensive for what they do. There still just marines and dies to fast.
I would rather see purifiers with 4 psycannons each.
Less points and far more effective. 2 attacks each and have cleansing flame to kell hoards. You can put the inquititors in each unit of them so there will be 5 psy cannons in each unit! Thats 40 s7 rending if you dont move and thats not including 24 s5 shots (with pys ammo)
Thats only 2 units. Very good.

I always run a squad of Interceptors with a few hammers in there, and they are boss. A lot of people will say to take Purifiers instead, but they fulfill a different role. GK are known for being slow without a lot of mech support, and Interceptors provide you a super fast harassment unit that can hunt tanks as well. Our Strike Squads can dish out damage like crazy with psybolt ammo, too. I like the list, I think you'll cause some problems for people with it. Just too bad you couldn't find the points to upgrade those inquisitors to psykers and take prescience. Two twin-linked squads blasting away from midfield would really beat some face.

Few things to think about
1) I like interceptors. Grey Knights have decent range, but they need some tools to help make up for that. That is either fast movers (Kniights, Interceptors, or Ravens) or Long range shooting (Henchmen, Razorbacks, and Rifle Dreads) one one or the other is fine. Having no tanks at all makes first blood hard to get.
How well interceptors fare on the table really depends on how much terrain you see. Lots of terrain is great for them as they are play hide and seek really well.
2) Hammer on Sargents is very risky.
You are INT 1 with a 3+ save. You can die in a challenge before you get to attack. Consider moving the hammer to a random dork in the squad to protect from challenges.
'You can put a Halberd on your sarge.. With an INT 6 weapon you can kill a lot of things before they swing at you. it is an interesting option to consider.
3) Can you free up the points to get some Divination re-roll on your inquisitors. For 30 points it is a very powerful option for added damage. I would drop hammer entirely to free up the points for it. A re-roll to hit in combat is Way better than a single hammer.

With all the Str 5 weapons you have on the table, "most" fliers should be afraid, because you WILL roll 6's. So nothing wrong there.
I am hoping that you plan on taking a single Divination power for both of your Inquisitors, and just take the primary power of Prescience, this is a huge boost to your shooting ability.
As far as hordes.... if you take a 10 man strike squad and shoot at lets say a 30 man boyz squad, that is 16 TL str 5 bolter shots and 8 TL str 7 rending shots... hordes? what hordes?
I agree with the previous post though, I would not be putting hammers on any of my Justicars, I would be putting Halberds on them. If you get in a challenge having that Ini 6 I think works better than being dead first.
If I was playing the army, I would play a flank game... I would fly hard and fast up 1 side of the table with both the interceptor squads and both DK's. Be willing to go 2nd and play their weak side of the table, and just flank it.

I was thinking about using a nearly Identical list, but with 2 modifications.
1) I upgrade the inquisitors to psyker1 with prescience (re-rolling hits on a squad of 10 GK with psybolt and psycannons = awesome!) x2
2) Since I'm now too short to have another full squad of interceptors, I've added a Stormraven. Can be used much the same way, but gives you slightly better AV14 popping power. (psybolt, hurricane bolters, and assault cannons get you as close to the shooting capacity of interceptors as possible, plus better anti-flyer)
So my list looks like this:
Inquisitor - terminator armour, psycannon, Psyker1 (110)
Inquisitor - terminator armour, psycannon, Psyker1 (110)
Strike squad - 10 man, 2 x psycannon, psybolt ammo, hammer (250)
Strike squad - 10 man, 2 x psycannon, psybolt ammo, hammer (250)
Strike squad - 10 man, 2 x psycannon, psybolt ammo (240)
Interceptor squad - 10 man, 2 x psycannon, psybolt ammo, hammer, Halberd (315)
Stormraven - TwinLinked Assault Cannon, Twin Linked multi-melta, Hurricane Bolter Sponsons, Psybolt ammo (255)
Dreadknight - heavy incinerator, personal teleporter (235)
Dreadknight - heavy incinerator, personal teleporter (235)

Like both lists alot, though I'd give your justicars the halberd for challenges. If you want a hammer then just give it to a scrub so he can't be singled out as easy.

It's a different role for interceptors. All my shooting is 24", so I need some squads that can get across the board in a hurry, either at the beginning to put pressure on, or late in the came to contest objectives or hunt down hiding squads.

The reason for the hammer on the sarge rather than a grunt is for the extra attack. It's there for vehicles or monstrous creatures rather than challenges, and I'd have no hesitation in ducking out of a challenge to keep him alive.
I'll have a play with things to get divination, maybe dropping the second inquisitor, as I think the hammers are neccesary.

Just a though, have you considered (obviously if sacrificing some pts here and there) to take a GKGM at the place of an Inq.?
Thinking about Grand strategy.
In Big Guns and The Scouring your number of scoring units will increase radically.
To me, even if I agree that a GKGM isn't really a fantastic character, this strategic option is just something impossible to ignore.

In both big guns and the scouring I have an additional two scoring units (interceptors or dreadknights), so That's not really a problem, plus I can combat squad if neccesary. I think the grand master is just too expensive for what he'd bring to this list.
