Are there any examples of things like servo-skulls in military drones? Similar to the tau, but really more like predator drones that are controlled by a sero-skull like apparatus, and therefore have some old sod's brain wired directly into it?

Kinda, both the Admech and the general Imperium have aerial vehicles that have servitors hard-wired into them. IIRC silver skulls used some thunderhawk gunships as heavy fighters by welding in some servitors into the pilot seat in the gildar rift space marine battle book.

Yeah, Redemption Corps does that as well - in a way - but I was wondering if there was a vehicle that was exclusively controlled by a servitor and/or perhaps its master Tech Adept.

The Imperium has a strict ban/disdain for armed unmanned platforms, going back to the Iron Men uprising millennium ago.
That being said they do use unmanned platforms for limited combat capabilities, like the Cyclops.
