So I recently decided to run some cavalry with my dwarves, and went with Knights of Dol Amroth over Gondor because Imrahil is a good hero and I like F4/C4 cavalry.
Now, here's what I have so far:

Murin and Drar - 150pts
10 Iron hills warriors (S4 dwarves) with shields - 110pts

Gwahir - 125pts
Eagle - 90pts

Prince Imrahil with Lance and armoured horse - 155pts
6 Knights of Dol Amroth with lances and armoured horses - 114pts

Now, that adds up to 744, leaving me 56 points to play with.
The question is, what to get with that- I was considering either 3 more knights to bring it up to 801 or 6 dol amroth pikemen for 798.
I'm not too sure whether or not to ditch the eagles in favour of more feet on the ground though- I picked 'em for their fast-moving, hard-hitting power, but would the knights cover that?
If the verdict is drop the eagles, I'd probably spend it on someone like a captain or an armoured Faramir with Guards of the fountain court (with shields) to support my dwarves for an all-D7 spear wall.
Which of these should I go with? Eagles and 9 knights, Eagles with 6 knights and 6 pikes, 6 Knights with Faramir and fountain court guards, or something else?

as a side note, I'll be mostly playing lots of decked-out easterling cavalry, with a couple of mid-strength heroes (Khamul, Dragon Knight) and a warband or two of foot troops.

Go with the pikemen. You're not getting enough attacks in with the 10 warriors.

Go with the Fountain Court as well. As much fun as the Great Eagles are, you only have a handful of models in an 800 point list - that's bad!

With Easterling Cavalry you'll definitely need a lot of men on the floor, esp. if you're playing Dwarves. If they charge, 2 attacks and knock to the ground will NOT end well for you!

quick question- I could drop two guards of the fountain court and run Beregond, who still has the bodyguard rule and has 1 M/W/F (plus an elf bow), but only 1 attack and 1 wound at D6- is he worth ditching them?

Plus, pikes seem a little excessive once I have a spear wall consisting of 22 D7 infantry and three heavily armoured heroes on the ground- wouldn't I be better served using those 65 (total of 805) leftover points running someone like beregond with four citadel guard with longbows, or some more cavalry?

Yeah, it does seem a bit exessive and over-killy. It's a good list already, but the Guard with Longbows will be good. Go for it! Good luck with your games.
