I have some pieces I am almost ready to post pictures of, however, there is one last, critical step to complete before they are ready for primetime.

To writ, matte varnish/sealer.

I have used Purity Seal and Army Painter Anti-Shine in the past. I find both of these products to be immanently acceptable, however, at this stage in my painting development I am seeking something a bit more precise and controllable. That is to say, matte varnish/sealer that I can spray through my airbrush.

I am looking for something that I can shoot through my gun that will take the shine off a thin layer of gloss varnish, so I turn to these forums for aid in recommending a quality solution.

Can anyone recommend a good product that will do what I need?

There are a few threads on this - try a few searches.

However, the one I prefer, and like are;

Liquitex matte varnish.
Testors acryl matte.

Depending on the pressure, and needle size, you may want to thin them slightly - but I use both very happily in my airbrush.

Vallejo have Gloss, Satin and Matte varnishes and work well through an AB.

Here's something I've done when I wanted more control but didn't have anything but rattle-can clear coats. I take the can of varnish, spray it into a bottle, then use that in the airbrush. Works great in a pinch.

Be forewarned - Liquitex Matte Varnish is far less matte than many other companies' offerings (I'd call it satin, personally). Not necessarily a bad thing, just don't rush out and buy some expecting a dead flat finish.

The instructions for the Liquitex Gloss Varnish specifically say not to thin it. Consequently, I've had it clog my airbrush to bits. However, I know of people who airbrush undiluted Liquitex Gloss Varnish (SchnauserFaceMinis from YouTube, specifically). I've tried it on 35 PSI. Is my 0.3 mm needle simply too small?

I use vallejo varnish through my airbrush. It requires thinning and a light hand otherwise it will fog up.

I thin it with testors universal airbrush cleaner as I do all my paints.

Maybe? I can't shoot it comfortably straight out of the bottle, either (I have a similar needle/nozzle size). I've diluted it successfully with water, both for brush and airbrush, but not consistently - I've encountered frosting with both application methods. I know it's possible, just fiddly. I imagine using a proper medium would help, but I don't know how much. I'm more or less an airbrushing neophyte, myself.
