I want to try out this list in a small casual game.
Rokkits are to help me punch through anything that might be strong.
Mainly relying on a huge volume of shooting, and eventually chopping.

With the 6ed Hull point system, i've fallen in love with trukks again

Not bad, but you'd be better off with big shootas than rockets imo.
Ork armies rely on numbers, so its going to be hard to make a good ork army with only 500 points to burn. A good casual ork army needs to be at least 750 points. Otherwise one squad of terminators is going to wipe you.

Yeah just stick to big shootas on the trukks, and I would probably just take sluggas in the trukk seeing as they will close in fast. Also trukks are pretty fast, so red paint isn't so necessary, I would normally take a ram over the paint if given a choice since it makes them able to tank shock.
You would probably have enough points from that to put a burna on the big mek, thats really the only useful thing I could suggest with the remainder. (Or stick with the red paint...)

Wouldn't necessarily be worried about terminators at 500pts.... If someone brings them, what else have they got, anyway?

5 Term's won't be any trouble for this list. You hit them with a double-charge and move on.

I'd say though, Klaws can handle anything "big" or "strong" you're likely to run into at 500pts. Even a land raider won't make it past the proper level of loving attention. You could fairly easily afford to drop all the Rokkits and then give your Mek something fun to play around with. You can be kind of loose at this level of points, honestly.

Very good effort, at 500 points the whole deal is point efficiency to get as many models on the field as possible. This is not to say you should spam grots.
I would actually drop the Trukks for more Boyz and possibly some fast attack.
Possibly have a list that may look something like this.

HQ (90)
- Warboss w/ Twin-Linked Shoota, Power Klaw

Troops (320)
- 20x Shoota Boyz w/ Nob, Power Klaw, Boss Pole
- 20x Shoota Boyz w/ Nob, Power Klaw, Boss Pole

Fast Attack (90)
- Deffkopta w/ Twin-linked Rokkits
- Deffkopta w/ Twin-linked Rokkits

I have used this list before to great effect, this is only a suggestion for I do not know what models you have or are looking to use.

I don't think i'm too worried about termies. I've got enough raw firepower and melee attacks to get through 2+. I can also, most likely, just drive around the trukk and maintain distance and shoot them down.

You know what, i've never thought about that. Red paint job really doesn't make that big of a difference in my games, so i'll definitely drop those in favor of rams.

My only worry about dropping rokkits is that if the enemy puts on anything armor onto the table, I won't be able to drop them until I get into CC, although i'll get there pretty fast.

I like the trukks because they feel safer in the trukk with the armor 10 and 3 hull points. Otherwise, the boys could get chipped down pretty quickly due to their 6+ armor

Personally I am a fan of deff koptas (i've got 15 of them ). While deff koptas do allow for twin linked, it would only give me 2 target options.
With the trukks and boys squads, i've got a potential 4 targets (if i deploy the boyz).

I do love deffkoptas though =]

Im not so sure about a foot list, its practically the opposite to the list currently up. Really I'd just say go with what appeals to you. Both have pros and cons; against a mech IG list, I'd probably want trukks since the boys will get pin-cushioned so fast from a couple of chimeras, but then versing a more elite list like marines, I would want lots of boys to swamp them. But you dont take the trukks to feel safer seeing as they are so easy to knock out, its just so you can get up there faster.
I would still recommend a big shoota over a rokkit. On AV10 the big shoota should glance a bit more than the rokkit, (then obviously on AV11+ the rokkits better), but with not giving any benefit to the damage table and a ROF of 1 its not very good. The big shoota is a/ cheaper, b/ has larger range and c/ it ROF 3 so its good for infantry and still acceptable at glancing light vehicles. Really the only situation I see the rokkit is better is against MEQs where the ap3 is useful. Once you're within 24" rokkit range in a trukk, you're almost at charging distance for a pk.
For this list I see 1 burna bringing more than 3 rokkits.
