In a few lists ive seen used in GT's there are things like 9 grey hunters and a wolf guard (so 10) in a pod and then the players are adding a rune priest as well.
Yet in the codex's it says you can only have 10 models in a pod. Im confused?

SW Pods can only carry 10 models. If the WG is wearing Terminator Armour then he counts as 2 models and the Rune Priest (assuming Power Armour) is a further 1 for a total of 12. Vanilla Marine Pods can carry 12 so maybe someone you have seen is getting confused. I'm surprised they didn't get pulled on that at a tournament.

This. Vanilla Marines have 12 slots, but Templars use the extra space to store censers, Blood Angels need it for their hair gel, Space Wolves carry the ale and Dark Angels have secrets so massive that they take up 2 slots.

They wolf guard is not part of the squad in the list, they are doled out during deployment and it is most likely that these GT list users are putting in the rune priest instead of the WG. They're not cheating, you've just mis-understood their list.
