I was fiddling about in Army Builder and realized that I could give my Archon a Husk Blade and Venom Blade (2 different special CCW). Can you choose per attack which to use, or do you have to select an individual one for the entire round of combat?

You choose one weapon for the round of combat. Page 51 of the rulebook.

You can but you can't use the rules from 2 weapons to get those benefits.
