Alternativley, stock up on a gak load of meatshields (Boyz, Grotz), and charge them with some powerklaw nobz/warbosses
But, yeah, MrMoustaffa is correct

Never played Tau but as far as shooting goes a squad of lootas with a SAG ususally does the trick against other armies I have came accross. Tau are known to shoot up your strong guys so be aware of that, get your lootas into cover if you can early on. One trick I use is to have a squad of something that looks more powerful then it really is to distract fire off the lootas.

Hmm... P/K nobz in a trukk could stick the Tau between a rock and a hard place when combined with Lootaz + Shokk Attack Gun.
Here's how it goes: Lootas + SAG set up along one flank (In the hope of hitting some side armour.
PK Nobz in Trukk speed down the opposing flank.
Boyz up the middle/everywhere.
The Tau could split their fire, but that's going to cost them in the long run.
If they concentrate on the lootaz, the nobz will screw them in melee.
If they concentrate on the nobz, their vehicles may have to turn away from the lootaz, showing them some side/rear AV, and being equally screwed.
That's if you can get it to work, that is.
EDIT: Also, storm boyz.
Use the FA slots as much as possible, you need to get close quickly, as Tau are experts at shooting. It will take one helluva Ork gunline to out shoot them.

Tau and guard have a rough time with zagstruk and the rokkit boys. Deep strike in and wreck them disorganized charge possible to tie up multiple units. Then nob bikers with claws or regular bikers even zip up turbo boost and slam into em. They got nothing in cc

main tactic i see people run against tau (never played against them) is a speedfreak list. Tau suck in close combat (looking at their codex they have what 3 models that actually CAN fight in melee, 2 of which are HQs one is an honor guard for another HQ) and orks excell in close combat. 1+1=Dead Tau.
Theres other ways to get up the field but theyre usually more gimmicky or "LAWLSY!" than reliable for orks. Zagstruk has been mentioned, which i dislike cuz my deepstrike scatter blows donkeyballz, another which i DO like is Kommandos + Snikrot + Meganob Boss or Ghaz (Snikrot says i come in this board edge, put boss in front for 2+ armor and LOS any AP2 attacks on a 2+. Next turn when they can charge, split and charge 2 things).
If you have a bikernob force, try to get the Outflank rule from the warlord traits. A bikerboss + nobz with outflank is fething scary to a gunline. Zip on the board, dakka something that you can hurt w/o a charge, survive next turn since i HIGHLY doubt 5-6 bikernobz w/ cyborks and FNP will die in 1 turn alone.
Whatever you do, even if you do bring a SAG (which is a hilariously awesome gun when it works), dont turn into a green gun line. Tau might not take out the SAG instantly (grot bubbles to stop railguns from pasting him) and lootas will usually survive a turn or two unscathed, but if you try to go more than 2 turns of just long-range dakka you WILL lose. I wouldnt take more than 20 lootas, and even that might be stretching it.
