I decided to get into WHFB and start out with the Dwarf battalion box set, so I've been doing some homework on how to configure the initial build, I planned on making 3 total units out of the parts provided, 16 warriors, 16 quarrelers, 16 Longbeards, and a cannon.

So far it seems that GW are the best build for the dwarf units, does that hold true? Or should I make either the warriors or the Longbeards shield dwarfs? I was also going to make a full command for each unit, any reason not to?

Well first off, excellent choice! Welcome to the throng! I think your plan sounds good. GW are always the way to go currently, Warriors and Longbeards both work well with them. Quarrellers is also good, give them GW and they can help the front lines after shooting down enemies. Or make them Rangers and they can flank.

Always give them full commands. There is no reason not to, and they will be needed in the battle. Also a Battle Standard Bearer is important later on.

As for other units, I actually proxy some GW Warriors for Hammerers. But I have plenty of extra hand weapons that are hammers laying about, and just by cutting off the top and putting it in the GW a pretty good Hammerer can be made I think. If you dont want to buy them that is.

A unit of 16 isn't that strong, bigger units are much stronger in the current metagame. So, unless you're planning to add to the units separately, I'd make those Warriors into one big unit of 32 with GWs, run them 8x4 and go settle some grudges.

I agree. You may want to invest in 2 battalions down the line. I find its an excellent investment and quick start to a big strong army. None can match the might of the Dwarves!

Yeah, I think mountain breaker's right. Dwarves have probably the most useful Battalion/Battleforce that GW sell, so it'd be good to make the most of it. You'll be needing plenty of core troops and cannons, both of which the Battleforce provides. Get two battleforces, a Lord, a Runepriest/Lord and maybe an Engineer or two and you've got a solid core to an army.

Damn staright! You will use everything, pretty much every game. Also Hammerers can be made from the Battalion by swapping the great axe heads, for the hammer heads of the hand weapons, I think it looks pretty good. Maybe not the best, but is certainly cheaper and easier than buying boxes of 5 for $25.

That's a pretty good idea. I imagine it being pretty fiddly and pretty hard, but if you had the skill and patience, this'd make a fantastic cheap alternative to hammerers.

Additionally, you may be able to buy hammers from other wargame manufacturers as bits, and then just stick them on standard Warrior models. I'm not aware of a specific retailer that does this, but I wouldn't think it unlikely.

Yeah it can be rather annoying but after a few you get the hang of it the Hammerers can go to war! I have also been searching for alternative models though, but to no avail. Not that I dont like the models. But they are too expensive now.
