Can any one recommend a good varnish to use through an airbrush, i was looking at using the Vallejo Acrylic Polyurethane. (one that i can source easy in the UK)

I use the liquitex brand varnishes in mine with little problem in my .25mm brush, if I am using my .21mm I thin a small amount with alcohol.

I use Windsor & Newton Galleria Acrylic Satin. Thin roughly 1:1 with water and a drop of flow improver and it's lovely stuff. Bought at The Range, but most art stores should carry it.
I will warn you - matt varnishes when airbrushed can go very dusty. Satin is best for the majority of purposes.
