So... it seems to me that while monstrous creatures are described in the fluff as being like 'living tanks,' they don't hardly live up to that. They're almost flimsy, even the toughest of them, and almost seem like slightly larger infantry. In fact, that's basically what they are: infantry with non-unique special rules. Any model with the same special rules is just as good.
Casing point: Carnifaxes, Hive Tyrants, and even Tyrannofexes can all be wounded by lasguns. Compared to battle tanks or Land Raiders, (supposedly of similar durability,) which generally need S7-8 to even hurt it, much less kill it. Not to mention, Plasma and such barely scratchespaint but melts MCs.
And while it's true that some weapons are indeed designed to kill MCs and big nasties... show me a weapon that's good against MCs, it's just that. Show me an anti tank gun... it's also good against monstrous creatures.
My proposal, then, is to make them seem more tank like. No more cover from a toe in area terrain, for example, but greater resistance to light arms fire. I'm not sure exactly how to incorporate this without flat toughness increases, though... perhaps some kind of Feel No Pain like save?
