If I have 2 units of guard vs a unit of orks.. like so

Where O is orks, G is guard unit 1, and P is platoon command squad w/ flamers, can the platoon squad target the orks with flamers, and if so, what happens? Do the intervening guard get roasted as well?

Assume (obviously) that all are in range of the template.

Your intervening unit would indeed be hit.

You're not allowed to place a template over friendly troops.
In that situation you would not be allowed to fire the template weapons. Page 52.

Ah yes it is any friendly I misremembered it to be just the unit the flamer is coming from.

Side question, not to thread hijack or anything, but in a related issue, what happens if the set up is thus?

Legend is as above, except that the gap in the G's is large enough that the flamer template could be placed through it (from at least one of the P's). Do you get to fire that template, then? I've seen some people claim that you cannot fire a template through a friendly unit, and some claim that you can so long as you don't hit any friendly models.

Oo good question. Also so I get I could't fire the FLAMERS, but could I fire other weapons in the PCS? (For instance... a laspistol?) And just say oh the flamers aren't firing

You can fire through the gap. The only restriction is you can't hit friendlies, nothing about firing between them.

Correct. In fact that applies to all shooting. A unit is not required to fire any of its weapons, you can always choose to not fire some of the weapons.

Empty space between models is not part of a unit, so either way still allows it.

Infact if you set it up to be

Assuming full 2 inches between models you could easily fit all the flamer templates between the models. (ignore the astrisk, dakka wouldn't let me put a space there without removing it)
