It completely makes sense to magnetize vehicle weapon options where there is space to integrate the magnet. But is it exceptionally difficult to do things like weapon or arm options on a figure? Say switching a gun for a close combat weapon? Or two-handed weapons for two single CC weapons? Any examples of this out there?

For example, buying the new Wraithguard models and using magnets to switch between the two guns or switch to the two CC weapons.

I'm not sure if I understand your question fully, but generally, magnetizing smaller bits is harder than larger bits for obvious size issues. This would make drilling the magnet hole more difficult than a larger bit as it requires more delicacy. Other than that, its the same process. A bit of greenstuff here and there helps too.

I don't have a picture of an example, but usually a model with multiple weapon options comes with multiple arms that correspond to different weapons. If this is the case, you can magnetize the torso so it can accept different arms. I don't know if its still up but try looking up in youtube Matt from miniwargaming on magnetizing a carnifex. I think its one of the best showcase of magnetizing tutorial.

It's definitely quite doable, particularly on the larger models like the Wraithguard. Personally I haven't tried it on a single figure model, but it's really down to the size of the magnets and the fiddliness.

One thing to take into account is that the joins will not be as neat as they would be were the arms glued on. My larger models - Wraithlords, all my tanks, War Walkers, Carnifexes, Tyrranofex, Tyrants etc. are all magnetized. I'm planning on extensive magnetisation of all the new Eldar - Wraithguard/Blades should be easily done, however there is quite a lot of model difference between the Blades and the Guard, so I doubt it's practical to make them interchangeable...

Making the weapons interchangeable should be fine though. Depending on how exactly the forceshield is modelled on the figure it could be possible to swap that in and out as well.

Depending on the figure... its a fairly managable task.
I've only really magnetised Space Marines thus far, but for them 3mm*1.5mm disc magnets fit the shoulders with ample room to spare, 2mm*1mm ones fit in the wrists and hands for swapping weapons out... I've managed to do everything with just those 2 sizes of magnet. From infantry weapons and options, to dreadnoughts and predator options all without needing bigger than 3mm*1.5mm N52 grade magnets, Magnet to magnet is quite strong when aligned well, figures can be picked up by magnetised pieces quite often. Magnet to metal... maybe a bit of a paper clip is enough to hold a weapon on, but not enough to pick the figure up by said weapon.
With the eldar, theyre a bit more slender than your average marine...I guess youl be looking at smaller magnets perhaps the 2mm by 1mm ones I've used where 3mm ones are too large on marines would suit them.
