I don't really know what to go with, I was considering Thousand Sons, Eldar, or Necrons (I don't really want anything too mainstream) Any suggestions?

thousand sons then as necrons and soon elder are very mainstream

A few more considerations, given the brevity of the first response...

Thousand Sons don't have plastic kits, if you want to be true to the modelling. You'll be looking at purchasing plastic kits with additional metal bits to customize them. Or purchasing fully metal models from eBay and the like. Suffice to say, it will be more difficult to model and more expensive to collect than a "mainstream" army.

Though, as croggy pointed out, Necrons are extremely common in the tournament settings these days, especially the croissant air force. And with the release of the 6e Eldar, they will likely see a huge increase in popularity and commonality. This is above and beyond the fact that they were already a unique and strategically-focused army with their 4e codex.

A few other considerations:
Tyranids are not too popular right now, but despite having some weird codex issues, can still be somewhat competitive. Especially if you focus on Tervigons, Termagants, Zoanthropes and Hive Guard right off the bat. Though, they will be a LOT of painting.
Dark Eldar are fun, unique, and still competitive despite being an older codex. Their lore is pretty gruesome, even in the grimdark, and can make for some fun flavor to add when modeling/painting.
Sisters of Battle, while facing the same collecting/pricing issues as Thousand Sons, are another unique force, despite being MEQ. Though, not very competitive at all... low S/T, lack of ATSKNF, and extremely limited unit choices make them a somewhat fun but very difficult to play army.

What do you consider "Mainstream?"
I think... any Space Marines (including CSM), Imperial Guard, Chaos, Orkz, Eldar, Tyranids and Necrons. A little more clarification might help your decision. Plus there are many shades of awesome in the vanilla armies (ie. Salamanders or Imperial Fists instead of Ultramarines), and Forgeworld-only armies as well (IG Tank Companies, Eldar Corsairs, etc.)

one that would be hard to learn with but interesting from a modelling prospective you be daemons.

as you know they just had a drop so it might be a little mainstream for your tastes.

but there are four gods so technically you are getting to choose five armies
the four gods then a house undivided

my buddy plays daemons and they are hard and wonderful at the same time
(he does a mono tzeentch list)

another plus for the daemons is most of the new models are plastic so thats always a plus and if you ever decided to styart fantasy magnetize the feet and stick em on square bases and bam fantasy army

I decided to go with a slaaneshi daemon army, I'm purchasing the slaanesh's ecstasy pack off GW, can I support that army with Emperor's Children or does it have to be strictly Daemons?

Word of Warning,

the Chaos Lord ability "Master of Traitors" is what allows noise marines to be taken as troops. It should be noted that Master of Traitors only works when Chaos Space Marines are the Primary Detachment.

So if you want Troop Noise Marines you will need to have your primary detachment be CSM.
