I know mods can edit a post, but are they capable of deleting one entirely?

They can but they pretty much never will. Removing stuff is generally viewed as messy and an overly aggressive way of moderating a forum.
Sometimes the occasional post is removed bit I can't remember or haven't asked what the guidelines are for that.

Actually, we delete posts fairly regularly. It just depends on the situation whether a deletion or an edit is more appropriate.

Whoa, you guys are ninjas, I've only noticed it happen twice and one was a pretty serious clean up in a thread that went haywire. Can we get some more info? Does it tend to be to get rid of rule breaking conversation? I had a post deleted once and I still have no idea why, was too ashamed to ask...

Like I said, it really depends on the situation. Mostly it will be spam or serious rule breaking. We'll sometimes delete posts that are responding to posts that we have had to remove or edit, to keep the thread clean and avoid having the whole mess start up again. Sometimes removing a couple of seriously off topic posts can keep a thread on track before it wanders too far off, although it's more common in that situation to just post a warming in the thread to get back on topic.

Thanks insaniak that's interesting. I forgot about the spam that gets deleted actually.
The post I had deleted was in one of the Infinity sub forum stickies. The one that tells people to hit the yellow triangle if there is a thread in the wrong place. I had asked when these were planned to be removed as I new Alph had gone in and pulled all the Infinity stuff early on. I'm guessing it was none of buisness really which is why it just got dumped off.
I'm guessing there is a lot more post removal in areas of Dakka I rarely venture over too. The more heated areas.
