Alright I'm not looking to build a tourney list yet but can I build a fun list with what I have? 1k, 1.5k, 2k?

What I have:
3 overlords
1 destroyer lord
41 warriors
8 immortals
2 crypteks
3 destroyers/heavy
11 scarabs
3 annihilation barges

What I SHOULD have coming (from a dakka trade...)
2 lords
5 more immortals
4 warriors

What kinda lists can I make with this?? Any input? Brand new to crons and 6th edition rules

How many points do you prefer?

Typically 1500 played against orks. That's the first planned game

Going off of what I see here. I would stay in the 1k to 1250 ballpark till you can pick up a few more models. Good thing is, I think you can build a fair list out of these units. I might go something like the below. (I'm going to include your soon to have units in this list)

Olord sw, ro, mss,sw
Veiltek

10 x warrior
10 x warrior
7 x immortal with tesla

Scarabs x9

AB x3

spamming AB is something you can figure out if you want to do or not. At 1k points 3 ABs will be considered cheddar to some folks. So feel free to cut one out and add something else in. But this list gives you very big targets in the form of the abs... scarabs to hunt down any vehicles a couple of decent warrior units for objectives and veiltek immortals for linebreaker and contesting/ controlling objectives you can't really footslog to.

Aside from scythes what do you think would be useful in 1500 point games? Friendly games of course. Maybe the next purchase will be 2-3 ghost arcs

Definitely need some scythes,
but 3 anni barges is the foundation to any good necron list
wraiths seem to the the thing to get after some scythes in my opinion

but as far as what you have now,
you could make a few different good lists

I would take the 3 heavy destroyers tho,
they seem to be the only thing strong enough in your list to wreck high armor
