For all of the basic gangs look in the main rule book, it's jus a case of which one you choose to use. There are a few versions of this about and are all essentially similar but with more updates included; First there was the original ruleset book, there was also a later hardback compilation as well - look on ebay for both.
There was a newer edition (the last published by GW) called Necromunda Underhive. This is in effect the second edition book and it's not dissimilar from the first.
Then there is the Living Rulebook version; this is the Underhive book that was to be updated by GW with community feedback. I'm not sure if it was ever updated but its a free PDF download on the GW site.
Finally there is the Community edition available from the most excellent Necromunda website Yakromunda.com. This is effectively what the Living Rulebook should have been and includes a number of fan rules with the idea of streamling the kinks in the game. This is also a free download.
There are also rules for Outlander and Ash Wastes gangs (plus many other additional rules) for most of the above rulesets. ArbitorIan did some very good compilation PDFs of these and has posted a thread on this very forum (so look down the list) of where to find them. He has also done this on Yakromunda.com.
Now being new to this I can see the above being a bit confusing (which book right?), personally I would suggest that you start with the Living Rulebook to see if you like the game (you will). It's the most commonly available and has all of the extra rules and gangs up to date (not true of the Community Edition).

Alright, found the gangs finally, but I need help deciding which house I want. right now it's a toss up between Goliath and Orlocks for the honor of hosting the "Team Smackdown Hotel"
I want a good mix, but I also want guys who can kick ass in close combat like most of the wrestlers I will be naming them after.

Then you will want House Goliath, but that said at the start of a campaign all gangs are even skillwise.
You can equip for a CC edge with multiple CC weapons (but no basic weapon) will mean multiple dice rolled in CC, but the skills that really make the animals have to be earned.
The Goliath skill table directs toward CC appropriate skills were as Orlock is a more broad brush approach. The nearest to Goliaths in CC are the Escher but they can be a bitch (pun intended) to get the models for if you want the actual GW ones.
TLDR: Goliath.

I'd have 3-4 lasguns/autoguns and a Heavy Stubber as a support element then go to town on pistols, swords and clubs for the rest.

Ganger: Sword, autopistol-75
Juve: x2 knifes
Juve: x2knifes
So heavies and Leader lay down some heavy firepower, while Gangers and Juves run up to stab at people.
Or I can make my leader a little less pricy and give him a shotgun w/ manstoppers and a chainsword.

I would look at getting autopistols for the Juves, the +2 at short range is most useful. 2x heavy stubbers is potentially good covering fire but a couple of failed ammo rolls (likely with 2-6 shots) and your going in naked. This is where a few lasgun ganger can be handy the 2+ ammo roll is not to be underestimated. A GL is apparently a good weapon (I have never used one) but with automatic fail on ammo rolls you need back up weapons to support your CC troops or you may find your Best model miles away from the action with no way of getting involved. If you look at the Yakromunda forum you will find many threads on starting Goliath gangs. Me, I'd want a leader (chainsword & a fancy pistol), 2 Heavies (1x Hvy Stubber, 1x Flamer or a Lasgun), 2x gangers with Lasguns, 3 Gangers with Pistol/CC weapon and fill the rest of the roster out with Juves with autopistols. I always try to give everyone but the Juves a back up pistol. This assumes a goup or two covering the advance of the Leader/Juves and with CC gangers in support.

Yeah the Heavy Stubber is a great weapon in Necromunda. If you can get one (them?) on a high vantage point you could really pin down an opposing gang to allow your CC teams to get stuck in.
The only draw back being the move or fire rule for heavy weapons which could see your two heavies getting left behind or out of fire arc if there are no good vantage points.
I note that your list adds to 1005 btw!

Personally, as I hate the GW Goliath models, I'd say model them from the Catachans.
The advantage there of course, is that they are far easier to convert than the old metals.

Yeah it 6 of one and half a dozen of the other for me on the Goliath/Catachan choice. They are fairly similar and the Goliath models are easily available on eBay, that said so are the Catachans but while you will have some sing choice with them you will not have auto or stub weapons s easy choices.
It really depends on whether you want the off the shelf Goliath or a more bespoke Catachan option which will require some conversion.
I'm also not a fan of the Goliath plastics but both the original and revised Goliath ranges have some very nice models.

I am not an expert, but I remember reading some Necromunda battle reports a LONG time ago and the author mentioned that every ganger was always counted as having a knife (so if you bought another knife you'd get 2 close combat weapons).
Was he wrong, or has the rule changed at some point?

What does the community edition have that the Living Rulebook does not? Meaning, if you just went with the Community edition, are you missing out on anything that you would have if you used the Living (like warband stats or weapon stats or anything)?

No, the Community Edition is just a clean up of the Living Rulebook rules. If you are joining a group, make sure to use the same rules they are using. If you are starting a group, I recommend using the Community edition.
I also recommend checking out yakromunda.com as it's probably the best Necromunda resource out there.

Actually yes, you will miss something if you go with the Community Edition as it currently only encompasses updating the Main Rules from the Living Rulebook. So there are not yet revised and updated rules for Outlanders or any of the additional rules content from the various publications.
That's not to say this is a problem as there are a few fan additions to CE that cover some of the extra gangs but they are not yet Yakromunda CE "official" rules. Obviously you can also do your own house rules for the few snags that might come up if using old gangs with CE rules.
There's not really a huge amount of difference between them to be honest; so its a 6 of one, half a dozen of the other type decision really.

New group. No one has ever played Necormunda before but we have a LOT of experience with Mordheim. We don't intend to use any additional publications outside of the main rulebook.

I'd go with community edition. It looks like it cleans up some holes and adds interesting features. all you're losing is access to the extra gangs that aren't in the base rulebook. That makes me very sad since I would want to play Spyrers for the cool factor, but from what I've read the variant gangs aren't really that encompassing of how Necromunda is "supposed to" be played (for instance said spyrers have to pretty much automatically run away from any "normal" fight if they don't want to get wrecked, and only come out when they are fighting an ambush scenario where they can wipe the floor with an equal number of significantly worse opponents. Not much fun for you or your opponent).

You can very easily use the Outlanders gangs which you can find at Yakromunda as well. They are also working on updating the Outlanders rules as a community edition right now.
As it is, you can use the old rules with very few problems meshing with the Community Edition.

The Outlanders supplement included things like:
Spyrers, Scavvies, The Redemptionists, Ratskins, Pit Slaves, some Special Characters, Wyrds, an Underhive Bestiary, Deviant Scum rules, Aliens rules, and some Chaos rules.
It also has rules for regular gangs ticking off the Guilders and becoming Outlaws themselves. I thought it added a great deal to the game.

Yeah, it covered all thing from the Sump. Where everything got all mutnt and polluted, plus a few other interesting bits.
It also came with some additional terrain bits.
