I've got a mind to finally paint my marines after many months of debating what to make of them and then realized that I can theoretically play as any chapter if I painted them as the Deathwatch.
Would it be weird to see a Deathwatch painted "space wolf army"
And then in another game they might be "Blood angel assault marine count as?"
Other than GK, it seems like any chapter could theoretically be represented by these guys right?
Addendem - I'd paint the left arm silver and then leave the right shoulder pad black most likely to represent the "omnichapter"

Actually the best chapter for a fluffy Deathwatch WOULD be GKs with SM allies.
GK allows you to take Xenos Inquisitor, some Henchmens
a Dreadnought.
Take the minimum troops in GK Strike Squads
Go heavy in Purgation squads to simulate all the heavy high-tech funky anti-Xenos guns.
Take some SM allies witha Drop Pod Sternguard squad and voila.
Or you can do the whole thing backwards
SM with GK allies
Go heavy with Pedro and max Sternguard squads and ally in a Purgation Squad

That sounds like a very fun idea!
As for the OP, I think thats a good idea too. Then you can effectively play with whichever SM codex you feel like in each game. Cheeky, but clever!

I would be ok with that so long as the models are WYSIWYG between each chapter (ie in one game you have a Skyclaw from SW and in another that model is a BA Assault Marine)

My go-to counts-as for Deathwatch would be Pedro and Sternguard. Pedro is a Deathwatch captain with some esoteric wargear, the Sternguard are Deathwatch, and the mandatory Scouts you take as troops are Inquisition stormtroopers.

All my space Marines are painted as BA. That being said, as long as the models are WYSIWYG then I don't see the problem as playing them as anything from Wolves to Dark Angels.

Mostly it comes down to what image you have in mind when you think of "Deathwatch". By now, there are several distinctively different versions of it around, all depending upon the source you're looking at.
Personally, I'm still going by how I got to know the Deathwatch from GW's White Dwarf articles, and I'd perceive a normal SM Chapter list as being way too big to represent these teams and would instead recommend using them as Allies, Sternguard, or a small GK list composed of Grey Knights, an Inquisitor, and counts-as- IST henchmen.
However, that is just one interpretation of many, and I have seen at least one very impressive DW C: SM army in a dakka photo thread!

I use my marine models as Vanilla, Space Wolves, and Blood Angels and have never had a problem before. So as long as you are wysiwyg for each army I think you would be ok. Other than a few specialty models for some of the codexes I think you should be ok.
When I first started playing I got most of my army from the store's used bin. My army was literally a Rainbow on the battle field. I had a red tac squad with a red rhino, an imperial fist tac squad, some sw tac squads, some sw terminators, some golden terminators. over time I have gotten rid of them all and have been working on making a unified force.
My current Marine army is all made from Dark Angel Veterans. I've got 10 with Jump packs, 10 tac marines, 2-4 hero types that I use as anything from a captain to a librarian to a wolf guard, a storm raven with the pilot converted into a DA Veteran, a Dreadnought, and 10 terminators with 5 being normal assault terminators with some conversions, 2 being sw terminators, and 3 being converted normal ones.
The only problem i've encountered so far was i made the assault marines to be BA gear so they have a flamer and a meltagun and I used them as normal assault marines with a flamer once and my opponent was being a dick about there being one holding a meltagun.
