I've been playing orks for a bit and find myself at odds with the army as I play larger point games. My green tied works decently; however, I keep seeing the same weakness pop up.
How do ork players tend to address enemy tanks? PKs? Rokkits? Just Lootas? With no specific lascannon equivalent and our horrible BS2, I'm curious to hear how people confront tanks with orks .

For light vehicles, I use a metric ton of Lootas and Kannons (Big Gunz). I also throw in two Deffkoptas w/ TL Rokkits. I'm guessing you are more concerned about the bigger, badder tanks thouhg. For that, we don't really have a great shooting option.
For the higher AV vehicles, I find myself relying on the Power Klaw. This probably isn't what you want to hear, because I'm not fond of it myself. You can rely on the Nob in a boyz squad, in a warbiker squad (my favorite), or meganobs. The meganobs delivered from a truck work well as they can usually take a few hits in the following turn, but they are far from reliable and expensive. I like the small warbiker squad because they are fast, modestly survivable and hit rear armor at S9.
There is also the warboss. Put him on a bike with a Power Klaw and an Attack Squig and he will destroy whatever you like. Just be careful not to leave him open to the ensuing shooting phase.

Nothing says ORK to me like steamrolling flat someone else's ancient sacred artifact with a steamroller on steroids
Failing that PK's are about our only reliable tank killer, though tankbustas can feth over vehicles pretty well in CC with their cut-rate meltabombs and tankhammers (assuming they live that long). You'll lose them in the resulting explosion though.

Loota wreck anything AV13 and under with ease, Power Klaws for anything you can get close to. And if you take Battlewagons the Deffrolla will suffice. Otherwise, just ignore the AV14, its not like they will ever kill enough boyz to make a difference and you can just swamp whatever comes out of them.

This is a question that has been asked A LOT. You can find tons of threads with answers, and most come down to roughly 4 things. Now, one thing to note, is that I have yet to try the new Ork flyers, so I will not include those on this response as I don't know how well they do (from what I HAVE seen, the other options in the codex are still better).
AV14:
1. Battlewagons w/Deffrollas.
2. Power Klaws
3. Rokkit Spam
4. Ignore them
AV13 and lower:
1. Lootas
2. Rokkit Spam
3. Power Klaws
4. Battlewagon w/Deffrollas

Deffrollas are great if you can get there. S10 makes minced meat of anything.
Despite alot of poo-pooing over it I think Rokkits in boyz squads works a treat! 2x Rokkits for each 20 Boyz Mob gives you a 50% chance of a S8 hit. That's not bad and often you have 2-3 mobs. Sure those aren't great odds by some standards but for an Ork I would take that, and I do. Pop a transport and suddenly a wagon of 20 Shoota boyz can splatter the contents.
Also Kannons work pretty good but be bold, they have 36" range so deploy upfield. If the enemy targets them so what, its 60pts per squad and they are T7. Wasted shots if you ask me. BS3 grots is also a bonus.

Going through unit-by-unit:
Warboss with Power Klaw: S10 and lots of attacks. The obvious weakness is range and exposure to enemy firepower and so I think the best way to do it is to get him a ride with Boarding Plank. Alternatively give him a Bike and simply rush them, if you are confident you can survive the attack run.
Nobz: Klaws and either a Plank or Bikes. Can also be used on the leaders of a Trukk mob.
Meganobz: See Warboss and Boarding Planks.
Tankbustas: As the name suggests, but strangely enough I'd avoid the Rokkits. Instead, rely on Tankhammers, Tankbusta Bombz and Squigs to get the job done. The Bombz and Hammers are statistically much better than the Rokkits will ever be and it prevents you from suffering Glory Hog too much. Just get them a transport.
Lootas: Simply mangle anything AV13 and below through weight of dice. Given the choice between these and Tankbustas, take the Lootas because of range and versatility.
Warbuggies: Cheap Rokkits that are semi-accurate and on a fast platform. Always try for flanking shots and can double as anti-air in a pinch.
Dakkajet: Millions of S6 shots into the side armour will do a number on anything AV12 or lower.
Deffrolla Wagon: Because S10 and carrying Boarding Planks.
As a general rule I would avoid any option that needs footslogging (Dreads/Kanz) or relies on single shots (Rokkits/Kombi). Better to stick with something fast or long ranged, and with enough chances to really stick something in. To that end I really disagree with Boy-mounted Rokkits and would advise to keep them dedicated to anti-infantry, with only a Plank/Klaw Nob if you really need it.

mobile assault in general can also work well
most talks are AV 10 on the rear
therefore a unit of 20 shoota boys (60 str 4 attacks on the charge) will do quite a bit of damage
if tank moved
60 attacks=40 hits=6.66 glances
if tank didn't move
60 attacks= 60 hits= 10 glances
10 shoota boys would be 3.33 glances if the tank moved and 5 glances if it didn't. Still more than sufficient against your standard tank. (Even the very difficult to shoot down waveserpent).

I find Pks,deffrollas and looted wagons to be the best bet or if your friends are fielding to many land raiders try taking a nob biker squad with a warboss and add some pks in there. str10 of the warboss can go along way! Also lootas can hurt anything av13 and under easy! but the bikers are tough and the move quick!
