It took me a long time to finally understand the infiltrator rules and why you can't deploy the character and the unit together to get the rules, but I finally see they are right, and you can't infiltrate a character and a non-infiltrating unit.
I'd definitely consider it as a strategy against those poncy eldar wave serpent lists that can endlessly dance around your slowsides. Force him to potentially show you some armor facing's he doesn't want to.
I'd want to infiltrate some kroot up with the sides to protect them from counter assault units.
Some potential pitfalls stem from not having your whole force on the board. Tau are, as you guessed, a very alpha strikey army. Not having some of your guys on, and maybe not till turn 4, will suck.
The other problem is being out of ethereal support. I really rely on the ethereal's leadership.
If you want to be more reliable, it might just be better to use those markerlights and spirit of the zephyr to move the broadsides up the board faster than your opponent is ready for.
