ok ive looked at the plague zombie rules in my codex. it says that they are not allowed to take any options. now i see people saying they run 30 man units of plague zombies, but taking more models in a unit is the first thing under the OPTIONS list. so to get to the point, can you take more then the standard 10 models in a unit of plague zombies?

Yeah this was debated a lot when the codex came out; such that there was a FAQ entry specifically published to make it clear beyond all reasonable doubt.

As a side note for this unit remember it's slow and purposeful so unless master of deception or just leaving one squad to hold an objective they are very very slow about making it across the field.
