Usually, but not always bikes. Assault marines are more durable against things with decent strength and ignore armor saves, for no other reason than that you can take more of them. Tau will instantly dismantle bike lists, for example, once those jink saves magically disappear and they get shot at by Ap2 weapons. With assault marines, at least you get more bodies to flood the table with.

Not much, of course, and bikes will usually win this particular contest.

... of course, if the question is "Which can score on objectives in ruins?"... well...

Bikes have a jink save and higher toughness than AM. As Ailaros pointed out, Bikes are generally more survivable.
