I'm making a inquisitorial ork army if that makes sense for example I'm having dreadknights and razorbacks piloted by orks but I don't how I could model an ork deathcult or am ork crusader any ideas are very welcome.

So you're making a counts-as Grey Knights army, but using ork models (including looted vehicles piloted by orks)?

For a counts-as Death Cult Assassin, I'd convert an angry grot in a ninja outfit, carrying very sharp looking swords, and on a raised base to bring him up to standard human height.

For counts-as Crusaders, the simplest option would be Blood Axe orks carrying looted power swords and storm shields.

40k fanatics? Or shroom powered commando?

Simply using some of the WHFB goblin/orc nutters would be an easy option, although I'd 40Kise them somehow.

This is also an idea ive considered a couple times (the ork inq. army).

What id make sure is to add plenty of seals and looted holy items. so it seems like the orks truely believe they are these oh holy crusaders putting SM shoulder pads on and perhaps back packs could really help. Almost as if they slew some real grey knights and decided that they wanted to be grey knights too and started equiping whatever they could loot.

Ninja grots seen to be a good concept. For crusaders, cybork perhaps.
