Space marines - Minotaur Chapter list help!

Currently looking to make army lists of 1000pts 1500pts and 2000pts for 'casual' play something fun with a more even chance
of people being able to beat me and me them against a variety of all comers but I'm struggling to do that without feeling like I'm
being underwhelming about it. Units seem so pointy I struggle to put much onto the board that gives me much of an army.

These a few models I really like that I would like to put into the army though It's starting to look like I'm not going to be able to.

Firstly models I really like: Legion of the damned,
FW Bikes, Assault Marines, Veterans (of all types) & Centurions.

Units that are a must: Spartan assault tank (pref) Terminators + Moloc

Things I struggle to cover in lists previously: Flying, Gauss weaponry & being out maneuvered.

Idea's that interest me: Allying Imperial guard.

The problem I get is after I include my
HQ, my terminators to go with him and there transport I've chewd up 700pts or so
and then find myself struggling to fit things around it and I'm really bad with gauging what a good sized marine army is.
 My
DE 750-1000pts had 4 venoms, 2 fighters, 6 witches with a raider, 10 warriors and a haemonculus give or take so there I think in lies
my problem of not being able to get used to things... and while I want my list to be fun I want to have as much chance of
winning a casual game as anyone does.

This is what I have so far @ 1000pts its quite a small model count but the presence of the high armor is there and very
rarely will I be called upon to deal with fliers in 1000pts
afaik

Now I have an alternate list which, I honestly do not want to repeat as its really for sticking my foot in the rear
end of certain armies I absolutely despise. Str6 spam Eldar being one of them among other things and is
as follows though I still have 170pts to fill either by fleshing out with marines or adding mayhap a
master of the forge and tech marine to add some
HP regeneration to a few land raiders. Some suggestion
or advice on that would be nice also!

So with that in mind I'm looking to try and make a fun, enjoyable middle of the road army list that will both win yet
not be overly abusive. I'm not looking to dismantle or annoy absolutely everyone in my local
GW and gaming club
but I haven't used marines in almost 6 years and don't know where to go in terms of expanding a list.

Criticism, feed back, views, opinions would be wonderful. If I've made any ruling mistakes would be good to know
 also. I'm not sure
