On page 18 of the BRB, it says that the unit can only fire snap shots and cannot run, move, or charge until the "end of the following turn".
So if I pin a unit, would this mean that my opponent's unit can't do anything but snap fire until my next turn - being the "following turn" would be my opponent's turn?

Turn always means player turn. So, they can do nothing until the end of the following player turn. If they go to ground in your turn they can't do anything until the end of their turn. If they go to ground in their turn (during Overwatch for example) they can do nothing until the end of your turn.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.
Orks always ride in single file to hide their strength and numbers.

There is an interesting wrinkle to that though. According to the BRB FAQ a unit who had elected to Go to Ground in the previous turn who then becomes fearless acts as normal.
I'm not 100% sure that applies to pinning, but I thought it was worth noting since we mentioned units choosing to Go to Ground.

Didn't have my rulebook handy to check that. So yeah, if you can force Fearless on a pinned unit they give no ducks and get back in the fight. Battle Sisters do this well thanks to their Act of Faith.

The exact wording of the rule is important here:
A unit that has gone to ground cannot move, Run or charge. It can only fire Snap Shots when it wishes to shoot, and can fire Overwatch. At the end of its following turn, the unit returns to normal, the marker is removed and the unit is free to act as normal from then on.
The rule means that a unit that has gone to ground will remain in that state until the end of ITS following turn.
So consider the following scenarios:
One of your units is fired upon in the enemy turn and it goes to ground. It will remain grounded during your turn, but when your turn ends and the enemy's following turn begins, your unit will return to normal.
If you are Imperial Guard, and issue the "Incoming" order to one of your units before your shooting phase, it will go to ground for the rest of your turn, and remain that way during the enemy's turn, and then until the end of your next turn.
During your shooting phase, a unit of yours scores a wound with a pinning weapon against an enemy unit and they fail their leadership save. The enemy unit will be pinned (gone to ground) during the rest of your turn, and during the enemy's turn that follows, but return to normal before your next turn.
