Let's say I have a unit of Centurions. They are T5, W2. That unit takes 2 S10 hits and I fail all saves that I may have. Do I lose 2 whole models, or do I still have the 2 wounds per model to allocate?

You allocate the wounds one at a time. So if the first Wound causes ID, you then allocate the second wound to the next model in line.

Although as a side note, as it used to be an area of debate in previous editions, but has been FAQ'd now.

"Vulnerable to Blasts" does not multiply the wounds and allow you to instakill more bases than you hit.
