Still working on building the army, and am new to the hobby (played other ones though). So this is what I was thinking, but let me know how I could improve it.

HQ
Coteaz 100pts

Troops
Strike Squad (10)
2 Psycannons
Pysbolt ammo
Rhino
280pts

Strike Squad (10)
2 Psycannons
Pysbolt ammo
Rhino
280pts

Strike Squad (10)
2 Psycannons
Pysbolt ammo
240pts

Psykers (5)
Rhino
90pts

Warrior Acolytes (8) (Coteaz will be going here if it isn't self evident)
Carapace Armor
5 Boltguns
3 Plasma guns
Chimera
154pts

Elites
Vindacare Assassin 145pts

Fast Attack
Stormraven
Multi Melta
Assault cannons
205pts

6pts still to spend.

Updated due to some suggestions and a mistake I made (I had one too many psykers before and the points didn't add up lol). Not sure if I want to do it this way or change up the warrior acolytes. Alternately I could drop the carapace armor bump them up to a total of 11. This would give me the option to get some more items for my SS, but then I couldn't bring myself to use Cadian Kasrkin models as my warrior acolytes lol.
Not sure how well this would fare, but I also picked some items due to wanting to paint certain things lol.

HQ
Coteaz 100pts

You will love this guy. One of the best HQ's in the game.

Troops
Strike Squad (10)
2 Psycannons
Pysbolt ammo
Rhino
280pts

A very solid unit as well.
If you have the points the Spare, consider a Halberd on the Sarge for INT6 in a Challenge
IF you have the points, consider a hammer in the unit for more damage in assault

or just keep it as is

Strike Squad (10)
2 Psycannons
Pysbolt ammo
Rhino
280pts

Strike Squad (10)
2 Psycannons
Pysbolt ammo
Rhino
280pts

more of the same is fine. This gives you a solid scoring base for your army.

Psykers (6)
Chimera
105pts

Personally I like to run my psyker units in a Rhino. You only need 1 firepoint for their shooting attack, and the Rhino is cheaper.
If you feel like you really want the guns from the Chimera, this is not a bad choice

Warrior Acolytes (5)
3 Plasma guns
Chimera
105pts

If you decide to downgrade to a Rhino, it would give a few more acolytes here to take wounds. Maybe even some bolters on the non-plasma acolytes.

Coteaz works very well with plasma henchmen. This is where I would put him.

Elites
Vindacare Assassin 145pts

This guy is reasonable. He is great against Land Raiders, but can do less damage than you think over the course of a game.

Fast Attack
Stormraven
Multi Melta
Assault cannons
205pts

This is a good set up for a Storm Raven

If you find you have points to spare another option to consider is the Hurricane Bolters and Psybolt Ammo. This would make the Assault Cannons S7 and the bolters S5.
It is a LOT of points.

Honestly your list looks pretty good overall. There are maybe a few small tweaks you could make, but keeping it as it seems fine as well.

You don't need DTs for all your squads. At least one GKSS will be baby-sitting your backfield objective, which means their Rhino will be mostly wasted. You could change it to a Psybolt Razorback for ~10pts more, and drive it upfield as a light tank. Or ~40pts more for a Psycannon on top (ie. Assault Cannon with Psybolts). Str7 Rending can pop any armour in the game!

Be wary of investing too heavily in Inquisitorial Psykers: if they Perils, then all of them die! And at Ld8, they're not that great at casting, either. As you have it set up, you've got an 8/1 Large blast. This is your biggest gun in the game, and it's on a pretty wimpy squad. That loadout looks like you're undecided on whether they'll be targeting vehicles or infantry. Pick one type of target and go all out for that. If you want to hit vehicles, get to Str10. If you want to hit infantry, Str7 is fine. At 5 Psykers, you'll still be at AP2.
Add a few Warriors for ablative wounds. When the Chimera explodes, you'll lose some models, and you don't want to lose Psykers.

I'll disagree with the fellow above and say that the Vindicare is an astonishing unit. She's frequently quite survivable (with a 3+ cover in ruins), and that makes the enemy pour a lot of fire into her, thus diverting it from other targets. I like to Infiltrating behind the enemy, and then use my pistol T1 to blow a vehicle on Rear AV. My FAVOURITE tactic is to have Vindi on the Icarus Lascannon; Deadshot means a dead enemy HQ on T1.

I've been tinkering around running squads like this
X3 plasma cannon servitors
5 psykers
Rhino
You would also run them in chimeras with a jokaroo or two

With the 6 points left over, you can get a Meltabonb in your henchmen unit I think

Was hoping to figure out strengths and weaknesses. I know GK are not the strongest currently, but want to still have a good show with my army as I learn.

Should I take the lack of responses as there isn't much to criticize? Guess this is my last attempt at seeing what people think before I purchase the last items I need to make this work.

The list is quite good.
I prefer some more punch to be honest (a DK or two).
As most GK list with lots of GKSS, if the opponent needs to come to you, you should be good, if he has longer range then you (TAU), it will be much harder.

In general the biggest strength that GK armies have is their flexibility. any "Grey Knight" unit is going to have good power in the shooting phase, good power in the assault phase and decent mobility as well.

You can out shoot fighty units. move back keeping the enemy just in range of your 24" guns, and pound away turn after turn.

You can close the gap and out fight shooty units. As you are moving up you can either shoot to take out priority units or run to close faster as needed.

GK armies in general have 2 big weaknesses that you can build around.
1) Short (ish) Range
2) Low model count

1) Short (ish) range

While 24" plus a 6" move is decent range, it is not really long range. GK lists can have a lack of shooting over 24" which can give them issues with lists that have high mobility and 36" (think mech Dark Eldar)

You list has a number of things to counter act this.
Mobility from the Rhinos
Mobility from the Storm Raven
Long range shooting from the Psyker henchmen, the Chimera
Long Range shooting from the Vindicare assassin

2) Low model count

GK lists can get very low in model count. We have some of the the more expensive basic troops, and it is easy to go overboard with upgrades and the like.

You list does a number of things to counter act this as well
Only took the most cost effective upgrades
Transports to protect troops
Henchmen can add more cheap bodies to a list

========

There is one big weakness that GK lists have, that there is no good way to deal with. Flyers

GKs are a 5th edition book, and as such they do not have any Interceptor weapons, and only your Storm raven has Skyfire

Your best (only) options are the Storm Raven, Aegis line, and lots of psycannons/plasma

You will do fine against a list that has a reasonable number of flyers. The Psycannons, re-rolls from coteaz, and your Storm Raven will serve you well.

Against a Necron or Chaos Space Marine list with a lot of flyers, you may struggle.

Necron Air puts a lot of things on the table you can't kill easily. They will tear apart your tanks very fast.

Hell Drakes have an AP3 flamer that kills GK's very fast. They will take out any exposed GK unit very quickly. Terminators could be a consideration, but though they are better against hell drakes, they are worse overall.
