A bit of a dumb question because I can't find anything suggesting this works...but I recently read that a lot of artillery is auto-destroyed if you force it to move (tank shocking, Mawloc, etc). Is this actually true?
Nope, it's only auto-destroyed if it has been forced to make a 'fallback' move and doesn't have enough crew left alive to do so.
In every other case of movement where it is lacking the necessary crew it's simply unable to move. If there are enough crew around, it can (and should) be moved just fine.
