I've purchased a starter box, but they're not ready to play with yet.

Any tips on proxying the game so that I can show it off and intrigue my other friends?

For the first few games me and a mate did when we were starting was just with 40k models. Since we were starting off it was pretty simple, IIRC the very first was 3 models each 2 combi rifles and a HMG each. He had some kabalite warriors as his combis and a haemonculus as the HMG and myself some tacticals and a force commander. Even past that it was still okay at the start as we didn't have much diversity in the units we were taking. With the number of different units we run now though, proxies would be annoying to keep track of.
The difficulty of doing it to demo for others is that you need a decent idea of the rules yourself. In my case we both were tiring of 40k and decided on starting infinity at the same time. Whereas if just you have started up infinity and are trying to interest others, I'd imagine you'd need a decent grasp of the core rules yourself... YMMV.

I dont know what you current group plays, but a good a guess as any is that 40k will fits in there somewhere. So if I were to do a demo, I'd try and highlight some cool things that separate it to 40k. Mainly the importance of TLOS, the ARO system and the effect of height in the game. Board setup is quite important. For instance, in our first game the highest point in the board was in my opponents deployment zone. Lets just say it was a quick introduction of how significant AROs are. So even if everything in the demo goes to fudge, just ensure you get across the importance of the reactive turn. 40k involves a lot of removing your models in their turn and their models in your turn. Definitely not the case in infinity. Often I've found it easier to kill in ARO and spend a whole turn setting up my guys to ensure if he does anything... bullets will fly his way.

I find that Star wars minis are the best when proxying Infinity. The scale is the same.
