Just a note before I put down the list, I use this against my two 40k pals, one of whom plays chaos space marines and one of whom plays Imperial Guard. Yes I want the list to be
good, but no I don't want the list to cause heavy rage. And before you offer any suggestions, I'm not going to use any tomb blades, c'tan shards, flayed ones, or monoliths
1 Imotekh the Stormlord, attached to 5 LYCHGUARD w/hyperphase swords and dispersion shields
7 warriors plus lord w/ sempiternal weave, gauntlet flamer
7 immortals w/cryptek (voltaic staff, lightning field
3 scarab swarms
3 scarab swarms
3 scarab swarms
1 annihilation barge
1 doomsday ark
1 doom scythe
8 warriors plus lord w/weave

You could use a bit of focus personally. Drop the Royal Court (The two lords and Cryptek), they aren't needed really. What is Immotehk attached to? Are you dead set on using him? You should probably drop the doomsday ark, they pair best with Triarch stalkers. One flyer also is less than ideal, and they tend to die fast, so for sake of arguement drop that doom scythe as well. So...you should have over 600 points to work here. Add another annihilation barge Grab x3 Tomb Spyders if you want scarabs to work, they will give you more of them, can keep your vehicles moving. Combine the Scarabs into two squads of 10 Add another warrior squad, likely of 10 Boost your existing warrior squads to 10 Boost your immortals to ten, give them Tesla Carbines, and put your OL or Immotehk in with them. You should have a goodly number of points left over, if you want flyers, look into night scythes, if you have space, get one for two for your warrior squads, drop each of them to five men, and put those 10 warriors into the last warrior squad. Attach a Lord with a Warscythe, Mindshackle Scarabs, Semp Weave, and a Res Orb to make that thing hard to kill off. Not overly cheesy by any means, but by far a more powerful list.

Shame you won't use a Monolith, they are great against IG and MEQ. Plus the eternity gate is fun.
Looking at what you posted, that's only 1250 points, what are you attaching Immotekh to? It says 5 and doesn't say 5 of what.
Bigger units of troops are usually better for necrons. Your opponents will have an easier time denying you a reanimation roll if he only has to knock down 7. If you can get the units to 8-10 for the immortals and 10+ for the warriors, they will have more staying power. I also recommend a necron lord with orb to help with reanimaiton rolls.
I sort of agree with iGuy on your heavy choices, I would go with the doomscythe or Doomsday ark, but I wouldn't recommend both. The reason being is that they are both big targets and your opponents will probably kill the DD Ark on turn 1 and then the Doomscythe on turn 2. After that, you're not left with any low AP shooting. I would drop one or the other and take an Anni Barge or another DD Ark if you drop the Doomscythe..
Scarabs are nice, but they work best in large numbers. A small number will just get destroyed, especially against an opponent with as many autocannons as IG fields. The instant death will just cause them to be a waste of 45 pts or easy first blood. If you put them in a big unit of 9 and run them up a flank, if your opponent shoots them up, hopefully there are still enough left in the unit to get to the tanks or stuck in melee so they don't get shot.
If you are just shooting for a fun list that's not weak but not crazy either, silver tide lists are fun (big blobs of warriors with necron lords and res orbs). Your list will be able to absorb a ton of shooting and you won't have to worry about your opponents complaining about an overpowered list.

I am working a bit around what models I currently own, as well, but mostly I'm wondering of good strategies that monoliths can be used for against IG. I had always had a bias towards not using them because of my failure with deepstrikes lol.

This, because he has managed to mishap a squad of 10 immortals with cryptek to their anticlimactic doom 2 or 3 times, now.

They still have a 24" template that is str 8 AP 3 and AV14. You move them 6" per turn until you get into range.
Honestly, unless it's a dawn of war deployment and I am going second, I deep strike my monolith(s). Don't try anything crazy, it just needs to be conveniently located near your opponent. Deep strike it in a wide open area, use the eternity gate to start moving units through it, drop the particle whip template, good times.
If you deep strike within 12 inches of your opponent then march a unit of 20 necron warriors through the gate, you can start rapid firing on your opponent's gun line. Next turn, march those necrons forward, move another unit through, do the same thing. A little suicidal but if you can contest an objective, it's worth it. Plus your opponent will probably unload his entire army into the monolith trying to kill it so the rest of your army won't be eating all those lemun russ shots.
You could also face the eternity gate away from your opponent and have the scarabs come through. Use the Monolith to provide cover and then make your 12" move the following turn and charge your opponent.
Or drop the monolith in front of your opponent's gun line and use the eternity gate to start vaccuuming his units off the board. Just hope for 5-6s.

Honestly that's not a bad strategy. Moving my scarabs up has been an annoying issue, and I could see this being part of a deepstrike heavy army (flyers, scarabs hiding, some ground troops, and wraiths that are in reserves)
