Which kind of beasts do you take in your beastpacks? How many beast masters?
I'm looking to construct my own beasts, so I thought I'd look into this tactic a little more.

My favorite is:
3 beast masters
5 khymerea
4 razorwing flocks.
EDIT: I've never been satisfied with Clawed fiends.

I'm panning on running this currently:
3 beast masters
5 khymerea
4 razorwing flocks.
In the past, I have used:
4 beast masters
10 khymerea
4 razorwing flocks.
It's a great unit, but massive.

3-4 Beast Masters, running 2-4 flocks and correspondingly 5-10 khymerae.
Khymerae absolutely want to be running defence for the flocks; the flocks have more attacks, Rending, and are only T3 so very vulnerable to S6 weapons which aren't uncommon. The Khymerae don't care what shoots at them because they have invulns. Think of them as Tau Shield Drones except way better in CC.

bahahaha, they basically are shield drones. Agreed with above 3 masters and varry the amounts of the rest. I've not tried the clawed fiend yet, should actually proxy it in next game and see how it runs but razorwings drop huge damage.

How many Beast packs you guys like to run? Is one enough, or should I start saving up for a second one?

I usually find only having 5 Khymerae rather lacking in protection vs a Tau or Eldar heavy meta. I like to run
4 Beast Masters
7 Khymerae
4 Razorwing flocks
This runs onto a little below 200pts, but I would usually add the Baron or a Shardseer (Or both!) into the unit so I feel the extra protection from the Khymerae is needed to protect the Characters. Some times I will even make it a full beast pack by adding 2 more Razorwing flocks. This is an extremely good bully unit able to be exactly where is shouldn't very quickly. The characters just add so much to the unit, if you are spending 200pts on them you might as well spend 100pts on the Baron which makes them a whole lot better. I would also usually only run a single beastpack, although if I had the models I might consider running 2 smaller beast packs each lead by either the Shardseer or Baron.

At this point I'm probably going to go 4 Beastmasters, 10 Khymerae and 4 Razorwings. I'm really wanting to know if I should start scrounging up a SECOND Beast Pack or if one will be sufficient.

One Large one if you intend to use it as a line breaker, two small ones if you intend to use them as bully/distraction units. A large beast pack like the one you suggested (I would drop a few Khymerae, they simply aren't needed) if you add either the Baron or a Jetseer with Shard of Anaris then that will be an extremely efficient unit which will draw, and weather, a lot of fire power. So it depends on what your army needs. If you play Venom Spam then I would go for two smaller beast packs for counter assault but if you play D/Eldar or Vect then a single Beastpack would be preferable as a line breaker.
