Wondering what the bog standard GK lists are so I Can be quasi competitive while I learn the army and expand on that. Any help would be awesome!

well from playing myself these units all work very well:
coteaz
psyrifleman dread (2x TL autocannons and psyammo on a dread)
psyback (5 strike marines or 3 basic acolytes in a razorback with heavy bolter or assault cannon and psyammo)
also some notes from my experiance:
paladins are awesome, 10 of them held up a DP, a geater daemon, and 20~ marines for 4 turns  (they did lose but the enemy took heavy loses aswell so all in all good)
never give stike squads melee weapons, they all cost too much for just 1 attack

Really depends on the type of list you wish to play:
Draigo, lots of pallidins
Crowe lots of razorbacks n troops
Cortez lots of henchmen and transports.
Psirifleman dreads are awesome!!!!
I would only use dreadknights in 3s not a necessary unit but effective.
The codex allows you to take several playstyles.

Well as I play with daemons I'm not used to a sweet 2+ save. DraigoWing does appeal to me, but I want to be effective on the tabletop.
My initial thought was to go with terminators as they're cheap financially to build the army. Are paladins a different kit than terminators? Or would the GK termies work?

Experiment!
I'd say 4 GKT boxes and 4 PAGK boxes are a pretty decent chunk of just about anything you would ever need for an army. You have enough terminators to run a full Draigowing if you want, or run some as Ghost Knights with Mordrak, or have them as regular GKT's with some Power Armor support.
You could also use one box of the terminators to make all your characters you would ever want, you can get a Mordrak, Draigo, Thrawn, Librarian and Stern all out of one box of plastic terminators if you're a little creative.
You can do something similar with PAGK's as well. You can make a Crowe, Brotherhood Champion, or Power Armored Inquisitors out of the box. (You can turn a terminator into a terminator armed Inquisitor as well)
Proxy a few dreads/dreadknights/stormravens/whatever until you decide which of those you want to run.

This is all great info. Would I be able to squeeze in paladins, draigo and psiflemen dreadnoughts with possibly some GK tac squads in a 1500 point list? thanks!

Depends what you're after, it's best to experiment! And Dreadknights are fun, and effective, burning a tonne of scouts off an objective is pretty useful, and the enemy will focus everything on it which gives the rest of your army an easier time!

With what you have said I would suggest this is a good start and will be good against most:
Coteaz (Warlord so Draigo can tank)
Draigo
5 x Paladins, Apothecary&Sword, 2xPsycannon&Hammer, 2xHalberds - 390
10 x Strikes, 2xPsycannons, 1xHammer, Halberd on Justicar - 235
10 x Strikes, 2xPsycannons, 1xHammer - 230
Dreadnought, 2xTL AC's, Psybolt Ammo - 135
Dreadnought, 2xTL AC's, Psybolt Ammo - 135

This starter army gives you potentially 7 scoring units (if you roll average on Grand Strat and Combat Squad the Strikes), a good resilient deathstar, good DS protection and decent long range shooting. The list will struggle against TAU and Eldar but who doesn't. In fact I might give it a go as it seems an fun little list!
If you magnetise the strikes backpacks with interceptor ones it gives you flexibility and options to try different things. Strikes can be called Purifiers, Interceptors (with magnets) and Purgation so you have some good options. Paladins can be called Terms (minus the Apoth and extra Psycannon), and the Paladins/Terms with Daemon Hammers and Psycannons can be Ordo Malleus Inquisitors with TDA. This little list is cheap and very flexible. I'm not a huge fan of the Psyfle Dreads and prefer Teleporting DreadKnights but others love them. And yes - GK Terms and Paladins are made from the same box - Usually the Paladins are modelled with books above their heads which come in the box.
