I need some help building a list against the Tau players, especially Taudar. Here's what I'm working with:
1 Abaddon
1 Huron
1 Chaos Lord on Bike, LC PF BB (these are optional)
3 Heldrakes
2 Forgefiend/maulerfiend
49 PMs (8 with plasma, 6 with flamers)
2 Predators
3 Rhinos
6 Obliterators
2 Daemon Princes (options = powerarmor, Black Mace, Murder Sword, of Axe of Khorne)
6 Chaos Spawn
5 Terminators (not assembled, yet)
I am also buying a detachment, which will have these units:
1 Karanak
1 Helard of Khorne
10 Bloodletters
20 Flesh Hounds
Please, any advice on unit selection/composition would be nice

Don't have time to go in-depth, but I'll throw in my 2c.
I presume those are the models you have access to, as opposed to you saying those are what you want to field?
You'll be asked these two questions before you start getting some solid replies:
-What points value are you looking at?
-Any idea what kind of models you'll be facing?
I've beaten suit-heavy Tau gunlines with 2x Maulerfiend, 2x 4 Spawn, 3x ~6 CSM in Rhinos (PM fit too), DP of Tzeentch with level 3 psyker @1500. Rushing their face is a solid way to do it.
I'd be leery of bringing bloodletters to the battle. If they footslog they'll get shot to pieces. If they DS, they won't be able to charge turn they come in and get shot to pieces.
Consider running Autocannon/HB predator with warpflame gargoyles, solid infantry/suits and soul blaze will mess with his targeting priority after a little while.
Most of the CSM models you've got are solid choices. Nurgle Spawn with MoN biker Lord gets you a solid push unit with PM troops (which clearly you're aiming for), and Rhinos keep those troops alive a little longer, which is needed to get them close enough to kill.
Only other thought is continue to use regular cover-hugging strategies, especially with DPs, Maulerfiends & Spawn, to FORCE him to waste markerlights removing cover instead of increasing his BS. The less he hits you, the less saves you have to make!

I think you have all the ingredients for a pretty good list. A Nurgle Chaos Lord making your Plague Marines Troops is your core. Add two Heldrakes to that, and then throw in some Forgefiends and Oblits and you have all the makings for a solid list (I prefer Forgefiends over Preds - It Will Not Die, Daemon 5++ save means you have traveling cover, Daemonforge, etc).

Do not buy that detachment. Your plague marines are better assault units thanks to blight grenades n plague knives.
U honestly have all the best units csm has. I need to see a battle report on how he beats u.

To answer some of the questions on here, or comments
1) I have all of these units, some of them need to assembled, but I have everything listed.
2) The PMs are not painted specifically for nurgle (although I bought the finecast). I used black, silver, magenta, and some magma. They can pass for regular CSMs if I want.
3) I am still very new, but some of the people that I play against play Tau, and I'm trying to prep for them. I don't know everything they have in their armies, but they are comprised of Ethereal, riptides, kroots, firewarriors, and another is comprised of O’vesa, Farsight, Crisis Suit teams. Both have Broadsides and Sky Rays.
4) The point levels seem to be anywhere from 1,500 -2,000. I'd prefer 1850 or higher.

I am working on putting together some cultists right now. I am, however, somewhat saddened by the fact that I feel forced to use cultists/zombies. They are not very killy, and it just becomes a strategy about survival as opposed to destruction, which I don't really enjoy.

Some one once told me. Play what you like since the reason you are playing the game is to have fun. Then over time you will get used to those units and get better at playing them. I think you can make anything competitive, sure some things and spammed lists are really easy to do, but you can still win with multiple lists. I think oblits and pm are good cc and in your face units. Remember oblits are DS capable and can heavy flamer the gak out of things if coming in close enough, esp a gun line. I think helldrakes are good choices. Spawn are a great delivery method for a lord on bike, but if he concentrates on them he will kill them off in 1 round of shooting, but then he has ignored other things. Rhinos will give up first blood which can be bad, but it is a way to deliver said group. Running a sorcerer with no mark with your bike lord and spawn is a good way to buff them up.
