I've done quite a few in photoshop for other games. Take an image of the stat card, clone-brush out the original text, write new text and cresize the new image to replace the old figure.
However, unless you're breaking the law, PS isn't exactly cheap, so I'd suggest GIMP if you don't already have PS. It's not the easiest program to use, but it's free and there's some decent tutorials to get you started. I haven't used it in years, but i hear it's quite good now (used to be a nightmare to use) and does pretty much anything you'd need PS to do. You could also make your own cards with Excel/OpenOffice spreadsheets, just set the basic card background to a backlay and match your cells to float over it.
An even simpler solution if you don't mind the look is any of the many Magic: the Gathering card generators you can find online. They are generally pretty easy to use and would work out just fine, although the text boxes might get a little crowded depending on the card.
