So right now I'm sitting at around 1k points for my Ork army. It's mostly boyz, nobz, lootas, etc. I picked up the Battleforce. How would yall recommend I kit up the Trukk? I'm still fresh to 40k.. Only played around a dozen games. I'll be picking up more trukks later as I feel them out, and I know a single truck is a bulls eye, but what does everyone think for a single truck in an army of roughly 1000 to 1250 points?

You are right in saying a single trukk has a target painted on it; however, it isn't necessarily a bad tactic to take a small unit of boyz and put them into the trukk and hold it in reserve. The sole purpose of this trukk of boyz will be to aim for and control an objective in your deployment zone or table half.

If you leave it on the table, it'll become a target. After you have multiple trukks is there enough targets for your opponent to be unable to defeat all of them and you can push forward with them.
