Saw a game being played recently (5 Daemon Princes smashing up some poor Tyranids). On a few occasions, the Deamon Princes got wounded by a Bonesword rolling a '6' but were immune to the Instant Death effect - they just lost one wound. Harsh!

Anyway, I was reading through the Daemons codex this morning and can't find anywhere the rule that says that all Deamons are immune to Instant Death... Is it in an FAQ somewhere?

That'd be a leftover from old rules. Very few Deamons have EW, the Skulltaker has it, and psykers with biomancy can potentially get it.
It'd be dead, I think a Black legion supplement army has access to a EW relic , but I'm not even sure DPs can have it

Chaos Daemon's used to have it as standard in their last Codex.
No more.

The only way Daemon Princes commonly get EW anymore is by taking Biomancy and rolling Iron Arm as one of their powers. They don't come with EW anymore, which is one of their biggest weaknesses.

Just Be'Lakor comes stock with it.
