The idea is really an attempt at my replacing my tau allies with a more resilient kind, out flanking with aggressive dreadknights.

A main point of bikes is to take their special weapons. With a 10x Man Squad, you'll not get their full potential. I would suggest bringing both Bike Squads to 5x Mans and adding more troops on the Grey Knight side and or adding a Thunderfire Cannon

Yeah, the list definitely needs changing. I've been trying to figure out the crux of bikers. I understand how they work (i.e. grav, hit and run, hammer of wrath and turbo boost), but getting everything right isnt so easy. I think some centurions, a thundefire cannon and maybe and allied priest bomb would add some flavor to the list.
