I'm looking at rounding out my Ordo Xenos inquisition list and I'm trying to decide between and Imperial Knight and 2 units of 3 servitors with Plasma Cannons, each with a Conversion Beamer Inquisitor with Prescience.

Knight.
Servirtors are nice and all, and provide more firepower-but are between the most fragile units out there compared to the punch they pack, meaning they will quickly be wiped out.

can neither confirm nor deny I lost track of what I've got right now.

Well, I'd take a Knight or two all day. The Servitors are nice but the Knights are more scary.

The knight is more durable, its the twin linked blasts that are drawing me towards the servitors, 8 high strength low ap blasts a turn is very nice.

I suppose its easier to keep the Knight near my Powerfield librarian though, so you guys are probably right.
