if you havent made one already, one of the most fun things to make with the Ork Trukk kit is an Ork Hot Rod.
i would show you pictures of the model that i saw that inspired me but i get dead links now.
Google will get you some good step-by-step on how to duplicate it though.

You a trukk towing a cannon or other artillery around? For a diorama, it's a great idea, but in-game, sadly there are no 40K rules for vehicle-towed artillery (outside of Forgeworld maybe?)

I was meaning would you be able to have a turret or something instead of having the troop carier bit at the back without being outside the rules

Depends, if you have the Imperial Armour edition with the ork rules you can have a huge variety of tanks, trakks are basically trukks but with big guns instead of transport. But even sticking to the traditional ork rule book, a trukk with a kannon instead of transport capacity sounds like a looted wagon to me!
In terms of conversion, you can go with anything My last trukk I converted into a battlewagon by using the side piece of a rhino for one half, some plasticard and a nice big ram at the front.
Google image 'ork converted trukk' 'looted wagon' 'converted battlewagon' or anything along those lines and you'll see plenty of inspiration along side some down right wacky ideas

In IA8 you can have trukks with mounted guns rather then having it as a transport.

Rules-wise, the closest codex entry to a 'trukk with a big turret gun' would be the Looted Wagon - unless you make a really big trukk in which case it would be a Battlewagon. But that all might change in the new ork codex we're hoping for later this year...

Is it for certain that gw is releasing an ork codex?

Are you looking to start from scratch, build on an existing kit or modify the GW kit?
I think some 1:48 scale military cargo trucks would be a great base model. I think Tamiya makes the WW2 2.5 ton and a more modern 3.5 ton US M35. I see them pop up on ebay all the time from different vendors. If you wait for a deal you might get 2 kits to the cost of 1 GW kit. then just get like 10 dollars worth of plasticard.

No one knows for certain outside of Games Workshop, and they keep their own counsel, because reasons. It's very likely that an Ork book is soon because it's a popular army that needs a book and it's about due, coupled with many rumors it is soon.
Anyway, buy a copy of Imperial Armour 8. You can make Mekboy Junkas which are pretty much what you're looking for.
Alternately, if you don't need legal rules, just have a look in the gallery.

Yes to junkas On page 153 of IA 8 There are rules for using a gun trukk. Build away, orks are rather forgiving when saying this kannon looking thing counts as a lobba/kannon/boomgun/killkannon ect.
