So, I bought the Imperial Knight codex and saw that one of the Knight worlds, Solitude, resides in the Ghoul Stars.

That region of space, being particularly grimdark, is fascinating to me. However, the only mention of it outside of the galactic map in the Knights codex is a brief mention in the timeline that the world of Solitude slipped into the Immaterium for a year before reemerging with everyone seeming to have dramatically aged.

I wonder if anyone has any more information on Solitude or, barring that, some ideas for paint schemes for Knights from that world. I'm eager to field a list of House Solitude Knights!

I don't think there's any more fluff around Solitude - that sounds like new fluff to me! It does sound neat, and especially grimdark though. As for paint schemes, I think a black and bone scheme would look appropriate for Knights from a planet in the Ghoul Stars. Play up the deathly imagery on them.

Ethereal greens and blues that you see on the more ghostly Vampire Counts models could work too.
