Ok so I know with artillery pieces the toughness of the gun is used but who's save do I use the gun or the crew members?

Saves are on a model by model basis.
If you allocate a wound to a crew member, you use their save.

The save of whichever model the unsaved wound is allocated to. Permission to use the gun's toughness for the other models in the artillery unit does not mean you have permission to use it's armor save as well.
