I only play friendly games, so anything can be proxied to something similar.

I'm looking for an easy to play/understand list. I don't have a good mind for strategy.

Here's what I have:

3 Leman Russes (currently kitted as Battle Tanks)
2 Chimera (Multilaser and Heavy Bolters)
2 Ordnance (currently Griffons)
Vendetta
Papercraft Imperial Knight Palladin

60 guard (give or take, about 15 have a special weapon)
5 Stormtroopers
5 Ratlings
3 Heavy Weapons models (currently Heavy Bolter, Lascannon, and Autocannon, 1 of each)
3 Blank Heavy Weapons bases (no models/weapons on them, but opponent is OK if I just stick two guardsmen on it and call it a lascannon team)
Marbo

Could you please help me build a list, and more importantly, provide some tactics for the use of each unit?

Thank you in advance for your assistance. ABOVE ALL I like to have fun, and winning would be nice every once in a while.

You should have all the pieces to play some decent friendly games. My 1500 point house army guard list looks something like:

HQ: Company Command Squad:
Regimental Standard
Medic
Vox Caster (arguable but looks cool)
Plasma Gun
Warlord w/ Bolter (also mostly just because he looks cool)

Troops 1: Platoon
Platoon Command Squad
Grenade Launcher
Grenade Launcher
Missile Launcher

Platoon Infantry Squad
Plasma or Melta
Missile Launcher
Vox Caster

Platoon Infantry Squad
Plasma or Melta
Missile Launcher
Vox Caster

Heavy Weapons Squad: x3 H. Bolters
Heavy Weapons Squad: x3 Lascannons
Heavy Weapons Squad: x3 Mortars (practically worthless but fun nonetheless)

Troops 2: Veteran Squad:
Plasma Pistol
Plasma Gun x 3
Chimera

Heavy Support 1: Leman Russ Squadron:
Battle Tank x 3

..from there, you could toss in your Ratlings and Vendetta and should have a perfectly fun-to-play list starting. In my experience, 3 Leman Russ Battle Tanks will inevitably win you a game or two as long as you're playing friendly. The list above isn't necessarily a hugely competitive one, but I've seen friends of mine who have never played guard before play it well enough to have a lot of fun and get some good games out of it. Most of your offense will be the veterans and the valkeryie. You can also hoof it or use your other chimera on one of the infantry squads. The Russes can lay down a lot of cover fire for those in a smaller game.

For 1500pts just take

Hq-company Hq (proxy storm troopers) they are there for orders which helps your army kill stuff a lot better.

Troops- take 6 units of 10 vets with an autocannon (you can proxy) as for doctrine try grenadier for a 4+ armour, or scouts for camo cloaks and defense grenades.

Elites-marbo, he is fantastic for his cheap cost, use him where his large blast can kill the most amount of toys, also if you can deploy him in cover at the same time he benefits from a +1 cover save.

Fast- vendetta, this guy is your best AA and At at a fair price, I always argue to fill your fast attack options with them.

Heavy- I would take a squadron of 3 LRBT with no upgrades, these guys base are very cheap, hard to kill, and can give your opponent template fear (which can led to him/her making deployment mistakes) .

Heavy- I would play the griffons as Colossus in squadrons of 1 their large blast is Ap3 and ignores cover which is fantastic.

So that's what I would do, I have no put up point costs because I don't have the codex with me atm i'm guessing anywhere from 1500-1600 depending on upgrades. Hope this helps and good luck!
