So...for instance you upgrade 1 ork in a troop instead of it being a basic boy, its the one with the heavy weapon (big shoota/rokkit) that gets upgraded.
This would leave the Nob with a choppa, that could then be replaced by a big choppa or power klaw.
I'm curious if this is legit or not, and if there would be any potential benefit to doing it for trukk boyz.
Would it be legit to have a big choppa on such a model? It says its a two handed weapon, so I assume no, but I'd like to hear if there would be any argument for why yes it could be.

You can indeed, as the Nob is still an "Ork", which is what is required by the Big Shoota upgrade. The Choppa can then be exchanged as well if you desire. You can even trade the rest of the squad's Sluggas & Choppas for Shootas as per the Ork FAQ: http://www.games-workshop.com/MEDIA_CustomProductCatalog/m3180058a_Orks_v1.4_APRIL13.pdf
Q. If a Boyz mob exchange sluggas and choppas with shootas, can a Nob take a power klaw or a big choppa? (p100)
A. You may upgrade the Nob to have a big choppa or power klaw before you choose to upgrade the mob to have shootas, in which case the Nob is not affected by the mob’s weapon swap (as he no longer has a choppa to swap), does not receive a shoota and keeps his slugga and power klaw/big choppa instead.
It's still legal to have a two-handed weapon as well as a heavy weapon, it's assumed the weapon is just slung over a shoulder or otherwise stowed whilst using both hands in combat.

Oh so a two handed melee weapon only affects what you can use in melee, and not shooting?

It's in the Special Rules section, on page 43 of the rulebook, and only affects getting bonus attacks for having multiple Melee weapons.
There used to be restrictions on how many weapons a model could carry / use, but those are an edition or two gone now.

Just to clarify. Big Shootas and Rokkit Launchas are Assault Weapons, not Heavy Weapons. You can move and fire a BS and RL.

Precision shots or barrage that kills him right away and then you are left without a nob or a heavy weapon...

The specific use I'm thinking of is for trukks, because I assume there's a decent chance of a random ork to die, but maybe not for a nob out right.

Flip side to this is that the nob with the BS/RL also gets Precision shots; so fully half of his hits(on average) take out enemy sgts/ ICs(especially when the nob has a rokkit Laucha)

If you are talking about exploding Trukks, then you might want to re-read page 80 of the BRB (Effect of Damage on Passengers).

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.
Orks always ride in single file to hide their strength and numbers.

Chance of killing nob in trukk: explode 1/3 * ramshakable trukk table dmg 1/3 then wound on 5+ so its another * 1/3 then without eavy armour 5/6 chance of killing. So total chance of killing nob in explosion its 5/162 so its about 1dead per 32 penetrating shots. Its very big chance...

Wounds on passengers from exploding vehicles are allocated by the controller, so you'd only have to place the wound on the Nob or weapon-carrier if you had no other Orks left. That's the rule Happy was referring to.
