Alright, going off my previous Imperial Guard list, I'm working on an 1850 list of Imperial Guard with allied Knights. The army looks as follows:
HEAD QUARTERS
- Commander Pask in Vanquisher with Lascannon: 215
- Vanquisher with Lascannon: 145
- Techpriest with Servitor x3: 70
- Ministorum Priest: 25
- Primaris Psyker: 50
TROOPS
- PCS, Sniper Rifle x4 in Taurox with camo netting: 103
- IFS x3, Lascannon x3, Flamer x3 225
- Veterans with Plasma Gun x3, in Taurox: 165
FORTIFICATION
- Aegis Defense Line with Quad Gun: 100
KNIGHT DETACHMENT
- Knight Paladin
- Knight Errant
TOTAL: 1843
I'm looking at keeping the infantry squads behind the Aegis with the priest. The techpriest will be with the tanks or knights. I'm not sure if the veteran squad is solid but I'm not sure what else to do with the second mandatory Troop choice. The Pask vanquishers will be targeting vehicles and MCs; I'm trying to decide if both knights should be paladins to add some more anti-infantry.
As the list stands, I have a couple of points to throw around. Let me know what you think.

Anyone have opinions?
I realize the knights and AM are a bit new but I'm hoping I have a list that is well-rounded enough to not get stomped in a competitive setting.

Wow, great looking list. Very scary. I have no advice, but I know how I'd beat it, or try to.
I'd use my drakes and allied Eradicator to toast the bejesus out of your back line. I'd use Belakor to Puppet master a knight to kill your HQ, then charge to finish off your other Vanquisher. I'd mostly ignore your knights if possible till the end.
But it would be very very close. This list looks killer.

I would swap primary and allied detachments. That way the Knights are scoring. You've already stretched to 2 Knights by adding a 3rd you get scoring on all and better Ws Bs and a 3++ on one for no extra points.
Also Pask in the Vanquisher is awesome but the Knights kill mech well perhaps a different Russ combo would support the Knights better. Like a normal Commander in Exterminators or Pask in Punisher with some Executioners or Punishers or again Exterminators.
I don't think the platoon and Aegis with Quadgun is a great fit as that gives you an anchor which gives enemy flyers something to go for after a round at your Knights. The best way to deal with Flyers in a Knight army is push forward and avoid them take some twin linked units to fire back once they fly over your head but largely you want to ignore them and win the ground battle. Or take a FBSC and kill them all as they come on.

I don't think the knights will be surviving long enough to effectively hold objectives, and if I remember correctly they can't contest objectives if an enemy is present.
I'd also like to stick to 2 knights, hence I wanted to create a blob that could hold an objective or two. I can understand what you're saying about the army being split though, flingitnow. I could look at switching the troops to veteran squads in chimera/tauroxes to keep them closer to the knights.
I also wonder what I would do without the aegis defense quad gun against fliers. I know hydras sadly aren't very good and I don't particularly want a vendetta, so I'm not sure what other options I have.

A single Quadgun won't do much to flyers. You can deal with AA by simply flooding the opponents deployment zone. Knights can contest. If you lose all 3 its probably game up anyway. But if you want to stick at two that is your choice.
Exterminators aren't terrible AA either.

I guess the reason I want to stick to 2 knights is to avoid making the army basically just knights with a little support. I didn't think 1 knight alone would be that successful since it would be such a fire magnet. 2 wouldn't be obliterated as quickly, and I would use the lascannon blob plus the vanquishers to blow up anything big enough to threaten the knights.
I can see the reason behind ditching the Aegis line. Getting rid of that and shaving off 30 points somewhere (probably in servitors) would net me a Leman Russ Exterminator, which could serve a dual purpose of anti-infantry and anti-fliers.

With Knights you are practically forced to field 3 in a competitive setting as 1 will achieve nothing and die as you state. But once you invest in 2 a 3rd brings so much more to the party that you should take it. Getting scoring on all 3 is enough but that you also get a better Knight too makes it a no brain decision from a competitive stand point. But you don't want to do that so I still think you want an entire army pushing forward. Which makes Pask in a Punisher quite attractive. Exterminators for support and guys in Tauroxes as the twinlinked Autocannons can help with AA.
