I really don't like the Demigryph models.... or the weirdness of humans riding them.

I would do without them completely.... but I thought of an alternative.

They're still monstrous cavalry, I'd put them on the correct bases, and they'd still be close to the right scale.
They're also still GW models, for anyone bothered by that.
The wolf theme would work better with my regular knights being Knights of the White Wolf, and...
while knights riding monstrous wolves is still a bit far fetched, it's more realistic than whatever demigryphs are

How acceptable do you think random opponents and tournament operators would find it if I had knights riding Space Wolf TWC mounts?

So long as they are clearly identified and the same base you should be fine. I don't think the size difference would be too massive between the two for LoS purposes. The one issue may be acquiring the Demigryph bases because they are a very strange size (a couple of mm off on the width and not quite 60mm long, it's befuddling to look at).

Generally speaking: the more awesome the conversion looks, the less people that will complain. Of course it's always good to check with your TO first if it's a serious tournament.

its a relatively commonly done conversion, and personally speaking Iv never had any problems with opponents complaining about my Demiwolves...

The riders are the older (one previous) edition Chaos Knights (metal knights/plastic steeds) and had legs on them. Just figured that they fit, especially with chaos banding filed off...

If done properly, noone will have a problem with it

If there is a, very rare, problem with measuring unit size, either have a replacement model to accurately check LOS or be ready to take the worse result.
