If you make a blunder, or forget a rule, then remember after the action has been resolved, how do you handle it? Do you pull a do-over, or roll with it and remember it later?
On a side note, how do you deal with observers constantly tossing advice in at your game? We have this problem occasionally, and typically you can tell whose side the observer is on, which adds to the competitiveness of the game.. so how do you handle it?

For blunders in casual games it depends on how long they've been forgotten & how much they affect the game In a tournament you should know your rules and if you forget some benefit you have that's your own fault. If you forget a penalty and I don't notice (say stupidity) that's on both of us because I would hope they aren't doing it on purpose.
"Crap I forgot my black periapt gave me 2 additional magic dice mind if I cast invocation of nehek before we do the next combat?" - Sure
"Ok my guys are frenzied" "Wait, you didn't roll for frenzy & didn't charge the nearest unit" "Ok mind if I roll now, if I pass I get my bonus attacks if not I'll just move my unit so I charged that unit instead?" - Depends on how that charge would have affected other things, if it's too much to change I'd just ask that since he didn't roll for frenzys penalty he doesn't get the bonus.
"Dude I totally forgot my wizard has a 5+ ward save so I should have gotten that save last turn & that means I have a +4 on my dispel" - No, you should have known that please remember for next time as I may have allocated more attacks to him or chosen a different wizard to cast the spell / thrown more dice into it. There's too many variables here. If hes adamant about it I'd probably try "Ok on a 5+ you get him back, BUT you do not get his bonus to that roll"
Generally if it's still your turn & doesn't HUGELY impact what is going on I will allow it, if it's too much headache or drastically impacts the game just roll with it, mistakes are how we learn. I once forgot I had banner of the barrows for 3 turns while I ground it out with some executioners, my bad.
As for Observers just politely ask them not to help the other player. A simple "Hey I know you mean well but can you please not give advice like that"? A lot of the time these people (and I've been guilty of it) mean well & think they're being helpful without seeing how they're negatively impacting the other player. Now if even after you bring it up you can always follow hank hills advice "We ask them politely yet firmly to leave"

My general rule of thumb is, take it back if possible. If it is impossible to reset the game come to an agreement with your opponent about the best compromise.

We had a strict gaming policy for years: no kibitizing.
gerund or present participle: kibitzing
look on and offer unwelcome advice, especially at a card game.
I think once a turn is gone it's gone.

Rule where I am is really easy, if it's in the same combat or same unit shooting or same wizard casting and you forget you can do over eg; 'oh I got miasma off on your unit so I should of hit on 3's indtead' = reroll HOWEVER 'ohh in the other combat we just did I had regen' = no reroll

In casual games its much as most have already said in my experience. If the event was only just done (or your in the middle of completing it) its generally possible to rewind the game back a stage and re-do the action to correct the mistake.
It can also depend on what happened and the complexity of rewinding an event.
For example lets say you forget a BS modifier when you shoot a group of genestealers with your marines.
You could play through the rest of your turn, realise the mistake and still re-roll that only if nothing else shot/assaulted or in any other way affected those genestealers.
If, however, you then piled on with other groups shooting them and assulting an the like it becomes far more complicated as you'd have to rewind those actions too - so generally you'd let it be.
Also generally once your turn is over that's it - any mistakes made during your turn are oft considered done and completed.
Movement can also be a tricky area, but typically most play with the chess rules of once the model is down its down. Rewinding is tricky because getting models back into their original positions isn't always possible (esp if you've an army with a lot of models in a squad).
As for observers, in a casual game I'd just politely ask them to let you game in private. They can by all means watch and cheer on, but no tactical advice please.
In competitive games they shouldn't be giving any advice and shouldn't need asking to not give their input.

Errors? What are they?
Jest aside, if you frequently forget a certain thing (I was pretty terrible for forgetting Eternal Hatred back when I started Dark Elves with the old book), write it down on a post-it note or something, and stick it to the front of your Army Book/Rulebook. This'll give you a little checklist to look at before each turn/phase, to make sure you remember everything.
Other than that, keep playing. The more you play, the more you'll become familiar with the rules and the way your army works and start to forget things less.

If my opponent makes a mistake at a tournament, he has to deal with it. Casual games with friends..meh, depends on the situation.
Observers should be quiet all the time. At a tournament, when I see an observer giving tips to someone, he is immediately banned from the site. Even in friendlies, it's bad, because it takes away from your focus. Quiet observers can be extremely useful by taking notes or even pictures and then talking to the other guys after the game. While the game lasts...shhhhh!

I've always played that it doesn't matter who's turn it is, both players should be looking for a fair and game legal match. So if one makes a mistake (to ones advantage or disadvantage) its the duty of the other player (if they see it) to make mention of it. That way both players help ensure as fair a match as possible.
About the only time that has problems is when you get someone who has a very blunt and oft hostile approach to raising the matter.
Also as for tips to avoid I find that its a good idea to use word or a similar program and make your own quick reference chart for your army. List out the stats, and then also list out all abilities blow the model. List their fluffy name and their feature for all ablities/powers/special attacks that are fixed for the model.
That gives you a quick chart that lets you easily check to see what your units can and can't do. Alongside that you can use your army list for the battle to make mention of abilities or upgrades purchased.
