I recently got the new IG Codex and one thing I'm kind of uncertain about is how the new Tempestus Scion platoons work. All the units in them have Deep Strike, but in the Force Organisation Chart the platoon is treated as a single Elites choice. When making reserve rolls for them, would I roll once for the whole platoon, or roll for each individual squad?

I kept looking for the old Clause that they come in on the same Reserve Roll but can't find it...

As above. They are distinct units, and roll for reserves separately.
