I'm not going to pretend I know what you... "Bronies" (I shudder at the word) see in that show, but I'm going to give my opinion, and I believe that MR will agree with me:

You want a good show? Go watch Fosters Home for Imaginary Friends. That show was geared for an older audience, as it was about the loss of childhood. It was also funny as hell, had great characters with depth, and everyone in it was fluid. In MLP, all the characters have personality traits that define who they are. In FHfIF, the characters are ever changing, gaining new traits. In the beginning, Bloo was a nagging little annoyance. By the last episode, ha was a caring, kind soul. It also wasn't a show where this happened:
1. Thing happens
2. Person A has a flaw in his/her personally that is exploited by said flaw.
3. Person B helps person A overcome the flaw.
4. Person A solves the problem.
That's MLP in a nutshell. Each story is self contained, meaning no character development can occur. A show like Fosters had a overarching story, so it allowed for character development. It also had the BEST intro music and video I have ever seen. It introduces the characters in a fast, funny and quirky way. It also contains no voices, which I haven't seen in a while.

I really think the 'So' is a sort of... "So are you really sure you want other people to know about this?" kinda So.
Don't get me wrong please. We all have our guilty pleasures. Not all of us broadcast them in public though. I think for a lot of people the fact that someone openly talks about what they do, is far weirder than them actually doing it.
Though in fairness you have made me feel much better about my guilty pleasure, which is (perhaps unsurprisingly) Warhammer.

While yes, Rarity is always a sort of fashionesta, and Twilight is always a book worm, they do show different personality traits as to not seem so one sided.

The episode wasn't about how prim and proper Rarity needed to learn how to be a bit more rough and tumble to get out of a situation; it was about how prim and proper Rarity was always intelligent enough to get out of such a situation on her own, in contrast to how others thought she would need saving.
In that sense, it's not that Rarity overcame a problem in such a way that we would expect to see a major change in her character, it's more about how Rarity is expressing herself in a way that we simply haven't seen before.
A better example of the situation you're referring to would be Fluttershy. Like Eduardo, Fluttershy started off as a shy scaredycat who could barely talk to strangers (unless they were cute animals). However, over the course of the season, you get to see how other member of the main cast give her advice on how to deal with those problems. A good example would be how in A Bird in the Hoof Fluttershy was acting as her usual kind self in trying to care for an uncooperative animal, with Twilight Sparkle telling her that she NEEDS to be more assertive and tough in her love.
Fast forward to the end of Season 1, and you get Fluttershy taking Twilight's advice to heart (perhaps a little too much.)
Other characters who have been in situations where their character would change--e.g. Applejack after Applebuck Season, Pinkie Pie after Party of One. and Twilight after Feeling Pinkie Keen--have simply not been placed back in such a situation yet, a problem that arises from the relatively short length of the season.
Time will tell if the creative team behind MLP takes such changes to heart like Foster's did, or not.

Hmm. I haven't seen any episodes aside from a few minutes of the one about Rarity (That one scene of her escaping) and the first episode. Your explanation is well thought out, and has a lot of points, such as Fluttershy, that I have to agree with.

Indeed! (Blossom was my favourite though. ) Yeah, I'm hoping that things develop better. I've seen very few cartoons recently as promising as MLP, and I'm hoping it'll only get better as time goes on.
