If I'm not mistaken, SM sergeants can carry a Storm Bolter. If I modeled a storm bolter as 2 independent guns, do you guys think that would be pretty cool? I would have to buy some green stuff. . .

I have dual wielding Space Wolves, I never thought of it as a Storm Bolter. I like it, Do whatever you feel gives your army character. If someone gets too bent out of shape over it they aren't worth playing.

2 bolters would be a better representation than 2 bolt pistols. Other than that, seems ok, so long as you remember to tell opponents.

Definitely. I do this on my bionic Aspiring Champions with combi-bolters. Also, it looks cool! Adding bionic parts is a plus.

Two bolt pistols is a specific wargear pick that has game effects. Paired bolters doesn’t really. And is closer to what a stormbolter does.

I have several Space Wolf models with bolter/pistol combinations, held out for maximum dakka. It looks pretty good. The SW Wolf Pack box breaks the normal GW convention of "all CCW on the right, all ranged weapons on the left" by having right and left-handed weapons of both types. Even has some plasma pistols for Scout armor and paired lightning claws and thunderhammers and storm shields for power armor.

also have a dual-plasma pistol IG commander (who now needs to be rebuilt to a legal config).

As it's been said earlier, there's plenty of actual storm bolter bits to be had. If you had to do a conversion from regular bits, a pair of bolters is closer (and requires less explanation) than a pair of bolt pistols (which is not a legal SM weapon loadout).
