I had a demo game on Monday and enjoyed it so much that I bought the core set then a there.
I've decided to go with the Rebels, but rather than buying another Core Set, would it be viable to go with the following stuff?
X Wing (Wedge)
B Wing
B Wing
E Wing
X Wing
I've not decided on the other pilots as yet.
My friends suggest getting another core set, but I don't see the point as I'm only going to use one pilot from there and I really want Wedge in my second X Wing.
Aside from that, has the list got anything going for it with just the bare bones here?

Are you and your friends splitting the core set?
Either way, you definitely want to pick up the X-Wing expansion.
B-Wings are pretty sturdy ships and are always a good pick. Keep in mind though that they will be releasing the "Rebel Aces" set soon enough and that has both a B-Wing and an A-Wing in it.
A Y-Wing gives you access to ion turrets and can be fun to play with.
I don't have much experience with E-Wings but they are quite pricey. Maybe swap that with a Y-Wing instead?
Play around with some online squadron builders to see what lists you can build with just the expansions you are planning to get.

While you say you are collecting rebels, it's great to be able to field 100 points of the opposition for demo games too. Also, another set of dice is useful, so a second core set is worthwhile. That'd give you 4 ties. Add a fire spray or shuttle and you have a decent opposing side for friends to use.
Be warned though, soon enough, you'll want them all!

I'm actually the last in my group of friends who are starting this game up. I'm also one of two Rebel players out of seven of us. The remaining five are Imperial and have already traded off with players at our local gaming club.
It's funny that you say I'll want them all, I can't actually stand the way the imps play. That and I'm on a budget, which is one of the reasons I'm playing.
I can afford to get one ship a month and it be ok with my girlfriend. 40k got too much per unit or vehicle.

I find imps more versatile than rebels, in that you can go the glass cannon route, or shield up with a tanky build. You can go swarm, or elite.
That said, both sides have gotten more options with the recent stuff, and imminent stuff, so they can both do a lot. I appreciate that budget is what it is though.

This will let you plan your squad, and alert you to what cards come from which sets. I'd start off buying enough for your favorite 100 pt squad, then expanding as your tastes change.

The Aces look amazing and fielding a squadron of Guard Interceptors or the other type is actually quite fluffy.

I've only played one game with Imps but I think it would be to barrel roll out of firing arcs and/or overwhelm them with sheer numbers.

Imps aren't totally bereft of shields. In fact, they can field more shields than the rebels with things like a 4 shuttle list. Firespray, advanced, defender and phantom all have shields too. With things like interceptors, you have to use thier movement capabilities to keep out of arcs, and their agility to ride your luck. Things like bombers, with their 6 hull, can still take a kicking too.

Buy whatever you think looks cool. Anything in X-Wing will work with the right upgrades.
Personally though:
The first thing I would go for is a second x-wing
Then the rebel aces when that comes out
Followed by a stand alone a-wing and b-wing.
Then a Y Wing
Then a YT.
Getting the same ships from different boxes gives you the most options as you can have 8 pilot choices rather than just 4 for each ship.
The Y-Wing is nice for the turret it can bring.
The YT, well, it means you can run the classic Han and Chewi with Luke and R2 in an X-Wing.
You may want to buy the stand alone a-wing and b-wing first if you are not lucky enough to get a rebel aces when it comes out, thanks to FF's wonderful incompetence with production.
But, this is just my choice. Anything you buy will work fine. If your on a budget you might want to get a YT first as then you can fill out 100 points quite well without too much outlay.

I've ended up going Rebels as my local meta (we have a lot of players, which is awesome) is 70/30 Imperial to Rebel.
My first purchases were 2 E Wing and 1 B Wing.
Got a game today.
My list is:
Corran (FCS)
Etahn
Ten Numb
Corran is just a beast and adds a lot of firepower every other turn.
Etahn gets the damage going with his damage to crit rule.
Ten has synergy with Etahn as his crits can't be cancelled.

TIEs use their stupidly good maneuverability to stay out of firing arcs wherever possible until they have a good shot. If he's shooting at you, you want to be at range 3 for that extra dodge. TIEs and Interceptors especially can fly circles around rebel ships, so you really have to play them to their best if you want to win. I like that though, it teaches you to really focus on plotting the right moves and made me learn pretty quickly when I was starting out
